Rubbing Beef with dry Onion Soup mix

Hi,

For years I've loved using dry onion soup mix on roast beef and steaks. Yesterday I bought a rotisserie and broke it in on a 1.65 lb tri-tip and it was fabulous; I had rubbed it with an onion soup mix prior to cooking.

Now I have a 2.3 lb cross rib roast in the fridge to rotisserie on Sunday and I have a packet of soup mix but now for my question.

If I rubbed the roast with the soup mix and put it in a gallon zip-loc freeze bag and put it in my fridge for 2-3 days, would anything spoil; the beef, the onions, etc?

I don't think it needs that much time, but curiosity makes me wonder how good it may become with a longer time to sit in the soup mix.

No, it will not spoil. You might consider trying the dried onion flakes available as bulk spices- much cheaper than the spoup mix and you can add soy sauce or beef boiullon powder for the salty element.
