If it is regular hamburger, 100 pounds will cook down to about 75 pounds, which is 150 cups. You will have PLENTY. You could reduce by 1/3 if you offer refried beans and rice as sides. For the toppings, salsa,, etc, you use the same quantities as a baked potato bar, which is posted in Big Pots already.

A friend who dabbles in catering for friend's weddings has new challange. He has been asked to cook enough squash for a guest list of 300. What is the best squash to choose when preparing for such a crowd? Many of us know how to come up with a cassarole size dish but this is far cry from a serving size of 300.

A summer squash casserole is great. Basically, you need 8 9x13 casseroles for 100. The ones below can be made ahead and frozen. See these two, either of which serves 25, to use for quantities:

I am making a spinach salad for a ladies church luncheon. The plate will include spinach salad w/ toasted walnuts, red onion, dried cranberries, and white balsamic vinaigrette and a 1 cup serving of chicken salad with a croissant. The vinaigrette is a basic vinegar, olive oil, and sugar recipe. I am having trouble determining how much spinach per person and how much vinaigrette will be needed for the 300 servings. Suggestions?

Spinach salad takes a lot of spinach, and you MUST make sure it is very clean.

For each eight plates, you need 1 cup of dressing, 3/4 to 1 cup dried cranberries, 1 cup nuts, pound ready to serve spinach. If you would go for a poppyseed dressing, you would be even more pleased with the interst in your salad.

4 #10 cans makes 1oo servings of green beans. For 2oo, I use 9. My bewtter green bean casserole is MUCH more tasty than plain canned green beans- you need 3 1/2 times the recipe to serve 200.

Bev, you don't say if the mac and cheese and rice are served at the same meal. Chicken quarters are covered in the plan for 100 page, you want 1 1/4 to 1 1/3 the amount for 100. I allow 10 9x13 pans of carb side dishes per 100.

LaToney, this is a VERY difficult estimate, especially if you have not asked for an RSVP and entree choice on the invitation, as the division of entrees is a complete shot in the dark, and with 300 invitations you may have anywhere from 150 to 400 guests. I need some additional information:

What time is the wedding and the reception?

Are you having the food catered or are you thinking about trying to do it yourself? This is a complicated menu for a do it yourself plan.

Is there an additional table for salads, fruits and vegetables? The menus as listed are incomplete.

Is there an appetizer table?

What is your recipe for seafood dressing? Some are mostly seafood, others have more ingredients, and it makes a difference.

Helpwise, you are looking at 4 fulltime in the kitchen, 2 servers minimum at each station PLUS 6-8 servers PER 100 guests to setup, bus/serve and cleanup the event.

For the beverages, see the beverage planning tables. If you plan cake, you will probably want to add dinner coffee service to the iced tea.

You are looking at at least $20 per guest for this menu.

The wedding time is 5:00pm and reception will at 7:00pm.
There will be appetizer served will pictures are being taken. This well be done as a gift from her co-workers.
My duty will be to supply or have the meal and drinks catered.
My seafood dressing made with corn bread,shrimps, craw fish tails, lump crab meat, bell peppers, onions, eggs and other spice/seasoning. My wish is to do it myself as my gift to her and my new son, they love daddy's cooking. If I have to hire a company to do I at less wanted to know roughly my cost both ways.Thanks again I love your website.

Hi, LaToney,

If it were me and I had a bit of loose in the budget, what I would do is:

Make my orange chicken dijon, which can be made ahead and frozen, and stays moist on a buffet, instead of baked chicken breast. Make the seafood dressing myself. Arrange to have a catering company supply the roast beef (steamship round, medium rare, if you aren't doing fillet or prime rib), with rolls and horseradish sauce. If you are expecting 300- wish you had an RSVP- you would want about 100 chicken, 100 seafood stuffing, and 150-200 beef.

The sides could be done by you, but are also usually reasonable from the caterer.

Let them supply the help, setup, and take down. MAKE SURE you have it in the contract that you will be supplying certain dishes and that they do the setup and service on those.

Do read the "Wedding reception menu ideas" thread and do read the wedding dinner article.

If the budget does not allow, then see if there is a local culinary arts program, maybe at the junior college, and hire from there for cooks and helpers.

You need about 120 sandwiches for 100 people if it is self serve. 1 pound raw boneless makes 3 good buns. Turkey is the same by weight, see the turkey yield tables in the holiday cooking section at the top of big pots for the yield of various cuts of turkey.

Wedding Recption for 400
I am preparing the meal for a wedding reception/dance that 400 were invited to attend.

The kids wanted to have Brisket Sandwiches, Calico Bean(which have hamburger meat in them), Potato Casserole(with corn flake topping) and then they have sheet cakes and peanuts for dessert.

I visited with them and convinced them that the bean and potato combination was pretty heavy with the brisket sandwiches so I suggested the Calicobeans only with potato chips, a relish tray and a vegetable platter to accompany the sandwiches.

Do you think this is suffient for an informal meal? I keep dobting myself and think I need to make either a pasta salad or a vegetable salad of some sort?

What is your opinion?
I have already prepared 220 lbs of brisket and frozen it, it will be served sliced for sandwiches. Do you think that is enough? I can certainly cook 4 more trimmed briskets if need be.

I plan to serve Calico Beans which have pinto beans, baked beans and navy beans plus hamburger meat in them.
We will also have potatoe chips, a veggie platter

You have plenty of meat. If it is a dinner meal, you could serve both the beans and potatoes and add a light cooked vegetable dish (grilled veggies, sqash, green beans, etc), this is more party-ish than the chips. If you do a veggie tray, consider a fruit tray instead, prettier and more popular. The relish trays are a good idea.

dulce, you want about 1 1/2 pounds total edible food per person counting everything. You want 16 pounds dry rice, the same amount of beans if it is a separate dish. Use the proportionate of beans as you would for a home recipe for that much rice if it is a mixed dish of rice and beans together.

Meats, since you have the other meats, the least pig you would get is about 10 ounces raw per person- if it were the only one, you would ant at least a pound. 3 ounces cooked ready to serve weight EACH per person for both the turkey and ham. Val, quantity fajitas and all the side dishes are discussed many times over on fajita and other threads, take a look. You need to add rice and beans to the menu if you do not want to go broke on the meat. You also need tortillas, not just chips.

Can't help with the instant potatoes except to tell you that for large portions, divide what the package says it will make by 2.

Chicken depends on what pieces- see the plan for 100 page, meat section for all you need to know. Add 10% if it is self serve. Green beans, rolls, and salad and dressing are covered in detail in other sections of the same page.

See the beverage planning page for help with iced tea. Since you are having cake, also make the dinner portion of coffee and decaf.

A full sheet cake is 18x 26 x 2 inches and will cut about 100 moderate pieces, a slab cake is 3-4 inches and serves more (depending on thickness). You might consider 2 sheets and something sugar free, like sugar-free fruit pie.

Soup is usually measured in gallons, not pounds. When I am using it as a main course, I allow 12 ounces (1 1/2 measuring cups) per person, about 8 1/2 to 9 gallons per 100 people. Plus breads, side dishes, beverages and desserts, of course.

I would plan for 3-4 ounces thin sliced ready to eat beef PLUS 2 ounces thin sliced ready to eat turkey per person to estimate; that is 2 pounds boneless raw beef for 6-7 PLUS 1 popund boneless breast for each 4- add another 10% if it is self service. Having 2 meats you need more, and you need enough to give everyone her first choice.
For your potatoes, just start with 35 pounds per 100.

Hi, Corinne, not sure why you are on the cooking for 300 thread.
These two items aren't too great done ahead and reheated. If you will use the baked rice recipe, you can do it in the oven and then turn down the pan (which should be tightly covered) to 180 for up to an hour. The green beans, if you are doing whole fresh, need to be steamed right before they are served. If you feel you MUST make ahead, consider doing a half recipe of the better green bean casserole for 60 on my holiday cooking section at the top of big pots. Or blanch and serve cold.

Dee, you use 5 times the amount for 100 for each of these items as listed in the plan for 100 tables. But you also need at least 8 kitchen staff and 30 servers to set up, serve and clean up a party this size, yes even buffet service, plus 10 serving lines if buffet (50 people per line) to accomplish service in a prompt fashion, 10 and 20 gallon pots and at least 3 ovens (commercial type kitchen) I do not recommend self catering a party this size if you are not experiences in serving 200 or more.

I'm trying to save money on my wedding by having my family cook the reception dinner. We are planning on having chicken breast, roast beef, bake potatoes, and green bean casserole. I have to keep the food cost to about $5 per person. Do you have any tips for how to prepare the chicken and potatoes for such a large crowd?

Heidi, you don't say how many people. but I do not recommend that an inexperienced team take on a wedding reception dinner for more than about 125, so the first thing is, limit your guest list. The second is, read the article on wedding dinners, the section on timing; if you have the wedding at 1 pm or 7-8 pm,you can have a great reception for about 1/2 the cost of a sit down meal.

That said, I suggest you skip the beef entirely, tender beef is very expensive and pot roast is not very festive. Use the Orange Dijon chicken recipe on the site or another which can be made ahead and frozen. Make a rice pilaf (cheaper and easier than potatoes), 2 vegetables; a relish platter or antipasto vegetables and a cheese platter; one of my salads that hold, such as the Greek salad. Have dinner service coffee (see the beverage planning page).

You don't say whether this is a side salad bar or a main dish salad bar, and there is quite a difference in amounts.Please write back and tell me, also whether soups, desserts, breads and sandwiches will be part of the bar.

In a full meal self service salad bar, the average person takes 14-18 ounces by weight and that includes the dressing, usually 2+ ounces, cheese, tuna, chicken, etc. as well as the greens fruits and veggies. If you outline your plan, I can help.

One 3x8 table set up for buffet or salad bar serves at most 30 people so you are looking at 10-12 tables just for serving if you want to feed all these folks at the same time.

Hello. I need some guidance and direction. We have a Blue and Gold Banquet coming up and are planning for 200 people to be in attendance.

We simply are providing Taco Salad with Root Beer. We have a limited budget so we want to make sure we have enough but not excess.

Could you help me determine how much of each ingredient below we should have available for people to build their own taco salad?

Renee, I would normally make 10 1/2 gallons for 150, but with 2 soups, I would make 7 of each- one will probably run out, the other you will have some left over.

Tinker, except for the wings, it is all covered in the breakfast planning table. I would allow 3 to 6 pieces of wing per person depending on the hunger of the crowd.

About 50 pounds of potatoes if that is the only starchy side dish. You need one chicken breast per person (you can split into 2 pieces if they are VERY large) PLUS 2 pounds pork loin for each 7 people to insure that everyone gets their first choice.

Chicken Salad - how much would I need to serve on mini croissants. And should I have one croissants per person? See the sandwich page and use reception level amounts. Allow about 12-13 croissants for each 10 people.

Mixed Nuts - how many cups should I have to feed the 300? 4-6 pounds per 100. How about a Chex mix type crunchy and some pretzels instead? More popular and nice with the sandwiches. 1/4 cup per person.

Danny, you can get a nice bbq catered in for about $12 per person (not counting food or dessert), for beef, pork, chicken. For an inexperienced party giver, you will spend 1/2 to 3/4 that yourself. You need 6 people to man the grills for a 300 person bbq.

You need about 18 gallons of chicken salad for meal size portions for 300 people, less if it is sandwiches, which I presume it is not because of the grapes. Make one recipe and measure it, I have no idea how big your big can of chicken is, then multiply to get 18 gallons (1 gallon=16 cups).

FOOD SAFETY ALERT; MUST be kept cold under 40 degrees from making until serving, Put in ziplock bags or shallow trays to store; NO MORE THAN 2 inches thick layer.

Nancy, this is primarily a DIY site, and I ask my readers to use the tables and articles to make an estimate, post it, and let me check it for them. Your items are covered except for the combo meat, and this is what I suggest for this; sandwiches for 250, sliced for 200, thin sliced so if people take some of each, it is OK.

For 400 people, you would need 8 serving lines (can be 4 two-sided lines), and at least 5 people in the kitchen, plus 24 servers to set up, serve, and clean up. You will need a couple of beverage serving areas.

If you expect 400, plan at least 40 servings at least of a non-meat item that non-pork and vegetarians can use as an entree.

Yes you can bake rice in an oven in the chafing pan and then transfer to the chafing pan. See the recipe for baked rice on the recipe box page.

Green beans are better on the top of the stove, steamed or simmered.

Latasha, use the charts to make a first estimate, post it, and I will be glad to go over it for you. You probably need to add vegetables- could be hot or cold, marinated- the plate will look pretty empty with just the chicken and salad on it.

Debbie, this is a nice size party and the meat is right on. I would do my better green bean casserole for 60, holiday cooking section at the top of the big pots section- much tastier than plain.

Judy, A "full" 16 quart roaster holds 12-14 quarts or 50-60 peoples' worth. You better have a LOT of electric circuits. Why is the fruit in a roaster?

Janice, per 100, about 30 pounds of chicken breast, 5 pounds of crackers and 12 pounds of noodles. About 2 1/2 to 3 gallons of gravy/soup per 100, I would make my own gravy.

See the plan for 100 table, do 9 times the amount for 100. Pay attention to percent of fat; regular burger loses almost 1/3, 80% loses about 1/5 weight when cooked. Sometimes the leaner meat is a better buy, even though a bit more per pound.

Just to make sure, is this for 300? Is it being served buffet style as a dinner? And are the meatballs appetizer, or one of the entrees (how many pounds)? Also, I would do 18 -20 pounds total dry pasta for both pasta salads, so you will have to decide how to divide it up. Write back.

By the way, I use pork shoulder for pulled pork, as tenderloin often cooks up too dry.

OK. For appetizer meatballs, you need at least 1 pound per 6-8 people- I usually do 1 pound per 5- or else skip it- you would run out.

Yes, 18-20 pounds pasta for the 1 salad.

Pork shoulder, boneless, 1 pound raw per 4 to maybe 5, depending on how much turkey.

i am planing on making 3 types of chili each about 100 servings.... i have been getting conflicting information on how big a serving size is and how far in advance the cooking can be done.... any advise?

Read the chili page. One important things about chili, because it is such a dense food, if you make it ahead, you must rapidly chill it by putting into shallow pans (2 inches or less), in refrigerators or freezers or ice baths. If you leave it in the big pot, it will spoil in the middle before it chills.

If it is served, about 6 gallons of each if you think they will be equally popular. If self eserve, with seconds allowed, about 7 gallons.

Cassandra, how you divide this depends completely on what three soups you choose. The amount is about 6 1/2 gallons for a single soup, but you will need more with three kinds in order not to run out of any flavor. So write back, what kinds of soup.

Most people use 3 slices of bacon, this is 24 pounds thick sliced or about 18 pounds thin sliced. About 12 pounds of tomatoes per 100 sandwiches, 5-6 pounds of lettuce and 2 1/2 pounds of mayonaisse. 12 pounds of regular sliced bread. If it is self serve, you may want to make about 120 sandwiches.

Ice cream floats, allow 1/2 cup ice cream and 8 ounces chilled soda per float. Have some diet sodas for folks who can't have regular.

We use a turkey deep fryer to boil water in the 28 quart pot that comes with it. The one we got also came with a strainer that fits inside the pot. This is useful for steaming/boiling vegetables.

Experienced caterers set up one serving line for each 50-70 people with large crowds, in order that all may be served in about 45 minutes. Allowing eating time for the last served, you want an hour and a half from start of service to end; longer if it is a formal party, such as a wedding dinner. But you need to get everyone served much quicker than that.

One thing that speeds things up, is to have breads, salads, and beverages on the table, possibly also dessert, if it is a single dessert.

Julie, the bread is easy; 12 pounds per 100, plus 3 pounds whipped butters.

When you make 4 soups for 130 people, you have to make too much (quite a bit left over) because there is no simple way to predict how many will take what; it is affected by region, what meal it is, even the weather. In addition, if it is for a winter soup, you might consider trading out the taco for a split pea soup.

I would make 3; for example, a vegetable-rich and not too thick vegetarian pea or lentil soup and a vegetable-rich chicken noodle, and a creamy one. For 130 people, 4-5 gallons each chicken noodle and creamy, about 3 1/2 pea/lentil.

This meal would benefit from a cheese platter, such as 12 pounds of logs, spreads, and slices' and consider fruit platters.

You should add several quarts of great jams and preserves to the bread tables (you need 2 lines, soup serves very slowly).

Also,a specialty platter such as stuffed grape leaves with feta, black olives and pepperoncini rings would be very nice. Aetna brand dolmas, which come 60 per can for about $8 and are available at Restaurant Depots, would be a great chyoice- 4-5 cans.

Also the type of items matters. Many people will eat on the average just 1.5 scones, but 2-3 minitarts.

A cup and a half is the usual serving for a stew, and you can't fill that poy all the way full; a roaster or electric roaster, which is the same size, is easier to cook a stew in.

When full it serves about 60 people.

So the amounts depends on what kind of recipe, whether the chicken is bone-in pieces or boneless. Tell me more.

Basically the same. Bring the water to a boil before adding the rice unless it is brown rice, then turn down to cooking temp. Brown rice, put into cold water, bring to a boil and boil 6-8 minutes before turning down.

Partially cooking most things including meats and vegetables, is not safe, because the temp the first round gets high enough to encourage bacterial growth but not high enough to kill it.

Better options:
Julienne (cut in matchsticks) and steam day of. As fast as trying to reheat
Casserole- put "carrot casserole" in a google search. There is a huge range of choices, from cheesy to puree to sweet.

Val, use the plan for 100 list, multiply x4, but then decrease 10% because you will be plating the dinners, so no one will come back for seconds.

Having about 300 guests for wedding, we are serving Ham (thick slice, not for deli sandwiches)& Broasted Chicken, I am also doing Cheesy Potatoes, Corn, Coleslaw & Dinner Rolls. We are Having the Banquet Hall doing the Chicken & Ham, But we are doing the side dish items. How many Nescos of each would we need for 300 people? We were planning on doing 5 Nescos of each Potatoes & Corn. & appx 60 lbs of coleslaw. WOuld this be accurate?

You need to end up with 4 ounces cooked ready to eat met per person.

So, estimate canned beef by drained weight. If you cook it yourself, chuck roast, top round (leaner) or top sirloin, and 1 pound will cook down to about 10-11 ounces. Cook low and slow to reduce shrinkage.

12 pounds noodles per 100.

Again, I repeat, I do not do costs. Most caterers charge 3 to 4 times the food cost, this covers staff, equipment rents, etc.

These items are covered in some detail on the plan for 100 page. Trimmings amounts for the sandwiches are on the sandwich page. I would definitely add fruit trays (see the fruit tray page); pasta or potato salad (many recipes for 100 on this site); a dessert buffet or maybe an ice cream sundae bar would be a fine choice, all are covered on this site.

Have sliced cheese, about 8 pounds per 100, for the sandwiches and non-meat eaters (in 300 people there will be some). Consider some big bowls of swirled peanut butter and jam, use creamy, not crunchy.

Yvonne, the biggest problem with this menu is, there is nothing to eat for anyone who does not eat meat. Would you consider a vegetarian soup?

chicken soup, You need 6 1/2 gallons per 100; it takes 20 cups (10 pounds boneless) chicken meat per 100. But consider a bean, tomato or cream soup without meat as an alternative.

Roast beef, 50 pounds per 100. Top rouund is the least costly
mashed potatoes, 45 pounds per 100
corn, 22 pounds per 100

2 types is good and with 120 people you need to plan for a vegetarian choice in addition.

However you also need an appetizer table, and here is why:
A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area One serving area is needed for each 100 guests.

Andrea, it is quite dangerous to set a price before pricing ingredients- most tri tip sandwiches would of for about $9, using a specialty roll at about $.80 wholesale and 1/4 raw pound tritip, and condiments and supplies (bags, napkin, etc.)

Cook the tritip, chill it, then slice it for best slicing and juiciness.

Beth, a dinner this size takes about 4-5 people in the kitchen and 18-20 servers up front to set up, serve, and clean up this size party.

It also takes 4 to 6 serving lines.

The ham and turkey, mash potatoes, gravy, stuffing, macaroni salad and toss salad, dinner rolls, see the estimates on shopping for large community dinners and the plan for 100 lists. Add about 8 pounds of butter.

The rigatoni depends on whether or not there is meat.

I found the recipe you are probably starting from, so I can give you the increases, and I have a few questions first. Are you willing to make your own taco seasoning? Are you willing to make your own Ranch dressing mix? Both these are easy to do and will save you a lot of money.

Also, are you going to top with tortilla strips or cheese or soiur cream? Also, is it the main course or one of several choice?

300 people requires 4-6 serving lines, 4 people in the kitchen/ handling food and at least 18 out front to set up, serve, and clean up the party. Most can't be part of the wedding, as they need to be setting up during the service.

Also, as it stands, this is an incomplete menu for a wedding dinner for 300 people. You seriously need 3 appetizer serving areas ready when the service ends, and here is why:

Raw Veggies? How many pounds? Use the veggie tray page. I would do salad for at least 200 and raw veggies for 200.

You need sandwich trimmings including pickles and onions if you are doing pulled chicken, see the table on the sandwich planning page.

Food for 300 people is over a quarter ton of food, please make sure you have storage and help adequate for the party.

A 5 pound pork butt serves 8 people.

Chicken long rice (chicken rice noodle soup) id usually made with dark meat these days. 3 pounds quarters, skinned and boned, or 1 1/2 pounds skinned, boned, thigh meat and 8-10 ounces rice noodles serves 8.

You can do a bit less with 300 people, there is about an 8% savings with this large quantity.

10 pounds lettuce
3 pounds croutons
5 pounds each tomatoes and/or cukes, if added
Parm cheese, grated, 1 tablespoon per person- 7 cups
1 pound raw boneless chicken per 4, grilled and sliced (generous, can be per 5 if less chicken is needed)
2 1/2 quarts thin dressing

You simply multiply. Hope this helps.

You need 6 1/2 gallons. That's 8 #10 cans plus add-ins, if you use canned beans.

For these old fashioned smothered green beans, you would use at least 3 pounds of bacon ends and pieces and 2-3 pounds onions, finely chopping the onions and cooking them down before adding to the beans. Some people also use up to a cup of sugar.

Thanks for your response! I am actually a chef but a personal chef so I know how to cook Im just totally lost when it comes to amounts. I have worked many events and at restaurants but I have never done the purchasing for the large crowd. I have 30 people on my food team so man power isn't a problem. Food with be served from 630-730pm and then dessert which is being donated by a local bakery after. It is advertised as heavy appetizers. The auction coordinator said I should plan on 300 people (although it is most likely 250) and she only want 400 sliders and 400 tostadas so that is what I will do per her request and that's what they are paying me for.
Amounts for pork for sliders (there will also be slaw in the slider) would be great! Also, I am using boneless skinless chicken thighs for the 400 tostadas which will also have refried black beans, avocado mango salsa and chipotle crema on them. THANK YOU so much!

OK, an hour is good for the food, will reduce amounts some.

pulled pork sliders, 1 pound ready to serve will make 12-15, depending o the size of the bun and how much slaw you put on. You want about 1 pound raw meat per 15 people(the sauce makes up the lost weight), and about 7 quarts fine slaw per 100 sandwiches. The Lexington slaw on this site is traditional.

Asian noodle salad, this is a hard to eat choice for this menu, requires a fork. Can you get them to switch to steamed dumplings, 2 1/2 per person? If not, about 6 pounds dry pasta plus add-ins for 100. Either a rice salad or a potato salad would go better with the menu- the Nepalese (golden) or Russian potato salad (bright pink) on this site would be attractive.
clam chowder- shooters usually hold 2 ounces. Make sure the potatoes and onions are diced VERY small. Talk to them about a smooth soup- vichyssoise, tomato basil, corn puree with red pepper, carrot ginger, etc.

I would strongly encourage them to add a dip/relish/salsa, such as corn and black bean, Texas caviar, antipasto vegetables (good recipe this site), etc.

Doing wedding buffet for 270 invited, so guessing need to cook for about 200. I will be doing pulled pork, and chicken of some sort. sides are rigatoni and parsley potatoes. and corn/green beans.

For 200, you would want, for combined pasta and potatoes:

1 #10 can potatoes per 16
Pasta, 1 pound per 12, about 1 quart sauce per pound (a #10 can hold just over 3 quarts.)

hi, for many years i have been contemplating to open a resturant. I am now ready to do so. If these are the questions you are asking, you are not ready to open your restaurant.

This is a VERY tough time to open any food business, because prices are unstable and rising, and good help is very hard to find.

New restaurants generally do not make a profit for 2 years, even when run by experienced managers. Do you have the cash reserves to pay 2 years' bills?

Pros tell us you should work in somebody else's restaurant for 5 years before opening your own restaurant or catering service. You need to understand basic book keeping, as well as small business management. You need to manage employees, payrolls. You have complex state and federal taxes to deal with, as well as state and local health codes.

If you have eaten at a Cracker Barrel, you can see the size portion that sells for $11. They use whole boneless chuck. Have you done any marketing surveys on food desires and price ranges in your area? This, not just your recipes,should determine your menus.

Do 10-12 pounds dry pasta, 1 quart sauce per pound, 1/2 to 1 pound cheese per pound. Larger amount if seconds are allowed.

24 pounds fresh.frozen green beans, or 4 #10 cans

18-24 pounds chicken meat (40-45 cups)
7 1/2 pounds dry stuffing mix

15 standard cans of each of the soups- about 10 pounds each if you can find larger cans

1 gallon plus 1 quart chicken stock

14 cans evaporated milk

I would add dried parsley, about 1 cup, and maybe some other veggies (frozen corn, mixed veg, etc.)

Hi Ellen,

I am cooking a BBQ buffet meal for 300. Along with pork loin and chicken thighs (with two types of BBQ sauce), I am serving 7 sides. If I understand your charts right, I need 30 gallons of sides for 300 people, is that right? The sides are: potato salad, baked beans, pasta salad, coleslaw, broccoli salad, Greek salad, & fruit salad. I am planning that the 3 starches will make up 15 gallons, and the remaining 4 sides will make up the rest. Does that work? Also, how much BBQ sauce should I estimate for basting and extra sauce for the buffet table? thanks so much.

I am helping a friend with a martini mashed potato bar wedding reception. Just can't figure out how much potatoes to start with. The potatoes will just fill the bottom of a martini glass and has to leave room for the toppings. Can't seem to find the answer anywhere else.

Use the same weight of potatoes as for the baked potato bar, the toppings are the same, also. It is attractive to offer about 1/5 to 1/4 mashed sweet potatoes with added sweet toppings such as cinnamon butter, raisin sauce, coconut.

rock candy, 1 pound per 5-6, this is not a favorite candy, I would add another 2-3 ounces per person of assorted bite size chocolate bars.
chocolate dipped strawberries, these will be inhaled and are expensive, you will need about 3 per person; I would do the deluxe fruit trays on my site for 200 and cut the chocolate strawberries to 1 1/2 per person

I would definitely add at least sandwich halves, allowing 2 per person; or subs, catering size, 3 inches per person; or something along those lines. Drinking will occur; they need more food.

That pasta is about 2 pounds per box.

The best help for you would be the spaghetti dinner for 50-60 at the bottom of the spaghetti page, and there are several large sauce recipes on the same page. You also need all the info about precooking and reheating pasta.

For 300 people, with you plating (not buffet), you would need 5 times that recipe.

Hi, Sally,

You are posted under feeding 300, so if you are really feeding 300, you need some additional info.

Day of, a party this size takes 3-4 people in the kitchen and about 15 people out front to set up, serve, and cleanup the party. These can't be people who were attending the wedding, as they will be working during the service. You need at least 4 lines, or 2 double sided lines for this many people. Since sandwiches are a slow serve, 6 would be better.

Also, a self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits. Deviled eggs are popular, if someone has time to make them, and

Liz, amount per person varies, depending on whether it is a dip, side dish, garnish, etc.

First, please read this off site article to avoid soupy salsa:

This makes about a quart (1 pound of tomatoes makes about a quart). I plan 1/3 cup per person as a dip.

The other way to reduce soupiness, is to split and roast the tomatoes.

Dana, chicken fried steak is usually served in large portions; you need at least 1 pound raw, boneless beef for each 3 people, and it needs to be cubed (tenderized at the butcher, or pounded to 1/4 ingh thickness); the alternative is to buy pre-breaded, frozen s.f. steaks at a restaurant supply place.

For each 2 pounds of beef, you need 3 cups each buttermilk and flour, and you marinate in the buttermilk at least 1 hour before cooking.

However, my advice to you is, do NOT even try to do a DIY deep fried dish for 300 people; you are talking at least 5 people in the kitchen who do not go to the wedding and at least 15-20 people out front to set up, serve and clean up this menu. A simmered dish such as Swiss steak or pot roast is practical; a deep fried dish is not.

Hope you can settle on a different entree. Also, keep in mind that with 300 people you need to plan for a vegetarian entree for about 20.

Ebony, this is a fine menu, but 6-8 meat choices is way too many for 100 people, because you have to have enough of each to allow everyone his or her first choice on the first service, and that means way too many meat leftovers and very high costs. To control costs, settle on 2-3, such as chicken, sausage and brisket or ribs.

Then take a look at this page, which discusses how to plan mixed meats for bbq.

You need at least one more item on the appetizer plan, why is discussed may times in these threads, I suggest either a fruit tray or an antipasto tray. You also need a entree for vegetarians, which with this menu could be veggie lasagna.

Additions?I would serve a cooked veg such as roasted mixed, which can be done ahead and served room temp. Or a steamed green such as broccoli. You also need a beverage for the meal, could be iced tea, ad I recommend reception level coffee with the cake, see the beverage planning page. Feel free to write back and do start a new thread.

Look at the size of the servings- smallish. Don't count on a box to serve more than 5. However, you will save a lot of money if you buy commercial size dressing mix at a restaurant supply store such as Sysco or Restaurant Depot.

I add honey and lemon to my fruit salad. Makes it a bit sweet and the lemon helps keep the banana and apple from turning brown.
If this is self serve, allow 1/2 cup per person, this is about 1 pound as served per 5-6.

Ingredients

Dough
2/3 cup whole milk
5 tablespoons sugar, divided
1 3/4 teaspoons active dry yeast (from one 1/4-ounce envelope)
2 large eggs, room temperature
2 3/4 cups unbleached all-purpose flour
1 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, cut into 1-inch pieces, room temperature, plus 1/2 tablespoon, melted

Topping
1 3/4 cups chopped pecans(about 8 ounces)
1/2 cup (1 stick) unsalted butter
3/4 cup (packed) dark brown sugar
3/4 cup heavy cream
1/3 cup honey
1/4 teaspoon kosher salt

Buns
1/2 cup (1 stick)unsalted butter, room temperature
1/2 cup (packed) dark brown sugar
3/4 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon kosher salt
All-purpose flour (for dusting)
1 large egg
Coarse sea salt (such as Maldon)

This is a terrific recipe, and will take a lot of baking and freezing, you need about 5 buns for each 4 people. You might consider a simpler coffee cake such as the oatmeal streusel sheet muffins on the Big Pots page.

French Toast/Syrup- I would definitely do either the baked French toast, link on the Big Pots page, or one of the stratas on the family brunch page.

Southwest Potatoes: Onions, green and red peppers, 35 pounds potatoes per 100. I would probably use frozen shredded for this large a group.

Where you will save is on the potato salad as it takes only about 25 pounds to make a half cup serving for 100 people, and that is about enough since you already have rice, beans, and bread. You might consider switching to slaw for one of the items; about 18 pounds veg for 100 1/2 cup servings.

QUANTITY RULES FOR CORN DISHES:
A 9x13 glass pan uses a recipe with 3 to 4 cans of corn and makes about 12 servings. You need 3 to 4 (usually 4) 9x13 pans to serve 50 people. A half recipe makes a round 1 1/2 quart casserole or an 8x8 pan.
1 can of whole corn, drained, is the approximate equivalent of 2 cups frozen whole corn, thawed and drained. 5 medium size ears of fresh corn make about 2 cups of fresh corn kernels. A can of corn is 15-1/2 to 17 ounces, about 2 cups.

Karyn, I don't do food costs, there is too much regional and experiential variation.

You are posted under a meal for 300. This size party requires a commercial kitchen, 3-4 people in the kitchen and 15+ out front to set up, serve, and clean up the party. Most of these people will not be attending the wedding, as they will be working, and the typical labor cost for a 5 hour set-up and reception is $120-180 per person. More discussion in my article on wedding dinners on plans, help needed, etc.

A very reasonable size for a less experienced family for self catering is 60-100 people.

For buffet service for a meal, about 1 1/2 pounds of food per person. My recipes are planned to result in enough for 100 buffet service, party size portions.

The best way to reduce costs, are to limit the guest list and to schedule the service for 1 pm, allowing a tea/dessert reception instead of a full meal, or 7 pm, allowing an evening dessert and coffee/champagne reception.

An expereinced, self catered wedding meal, you are looking at at least $15 per person not counting the cake and beverages, and it can quickly go up from there. The spaghetti dinner for 50-60 at the bottom of the spaghetti page will serve 50 buffet style, and would give you a starting place for estimating your food costs.

Hi Ellen, we are self-catering my laid-back country wedding. We have an industrial kitchen that we have access to the entire day before and day of the dinner, and have several people that we are paying the day-of to help. They are helping serve and prepare the food, but I am purchasing it myself and need to know quantities. I have some figured out, but I have questions. I was hoping you could help me.
This is a buffet for 260 people.
We will provide 2 entrees, pulled pork and fried chicken. Since this is a buffet and I haven't asked for food preferences on the RSVP card, how many servings of each should I provide?
I plan on 8 gallons each of mashed potatoes, cole slaw, and baked beans. We are using green beans from my grandma's garden that she has canned in pint jars. I figured 65 pints would do. 50 pounds of potato salad. As well as 10 ten-pound cans of corn. 2 dinner rolls per person. And, I'm clueless on how much salad. Thanks!

Kendra, this is a big party, requiring about 4 people in a commercial size kitchen and 12-16 out front to set up, serve, and clean up. These folks will be working during the wedding, not attending.

I never suggest fried chicken unless you are willing to purchase it ready to serve; this is difficult, even dangerous prep for this size group. There are some really good wedding chicken recipes on this site which can be made ahead, frozen, then assembled day of. And you have sauce for the potatoes.

I strongly encourage you to add an appetizer plan and here is why:

A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area serves about 100 guests.

Now, about the dinner menu.

pulled pork- with chicken, 1 pound ready to serve per 5, 12 slider buns or 5 regular buns per pound. 1 pound boneless raw pork makes a pound. I recommend shoulder for this use.
onions, 5-8 pounds sliced per 100 persons
pickles 1 gallon per 100 persons

fried chicken- 1 piece per person, or wedding chicken recipe using 1 pound raw boneless per 4

With this size group you have to provide a vegetarian entree, or at least a side dish that can serve as a meatless entree.

8 gallons mashed potatoes, cutting it close, OK with the potato salad
8 gallons baked beans, OK
8 gallons cole slaw, OK maybe some left

green beans from my grandma's garden 65 pints would do, plenty

50 pounds of potato salad, at least 7 gallons. With the mashed potatoes, you might consider pasta salad instead, it's easier, you would do 12-15 pounds dry pasta as the base.

10 ten-pound cans of corn. Assuming you mean the #10 cans, that will be plenty.

2 dinner rolls per person
3 pounds butter per 100

The tritip is VERY tricky for a large group. If it is self serve, buffet style, people will eat 1 pound raw per 2 people! If you serve it, 1 pound for 3. Do consider big fat meatballs- rare and popular these days, and cheaper to provide.

3. Vegetarian chili - 7 gallons, with cornbread muffins (small - 8 doz)

Potato salad - 8 gallons
Pasta salad - 8 gallons
Coleslaw - thinking just to use as topping for sliders - 5 gallons - should I do more to use as a side?
Caesar salad - 45 romaine 'hearts' - how much dressing will I need (I'm going to make my own)

4. Cookies and strawberry shortcake - DIY with slices of cake, macerated berries and either large bowls of whipping cream or canned (do you have a recommendation?) - 25 dozen cookies and 25 dozen servings of strawberry shortcake?

This will be the first time I've done a dinner this large and want to make sure I don't over/under estimate quantities. This is a fairly quick dinner - they've allowed an hour for the mains and I suggested leaving the dessert table up for a while longer.

A 40 gallon kettle weighs over 300 pounds when full...and you only need 20 gallons of soup to make 300 bowls.

I would cook the soup in several different pots and transfer, if you want the show of the giant kettle. Just a tip, though; the huge pots are difficult to serve from and can be dangerous, burns, etc, and fishing the dropped ladles out of the kettle is not fun. Keeping an even temp throughout is not simple, either. Electric roasters, which hold 3-4 gallons, about 50-60 servings, might be a better option for both holding and serving.

Also, make a few gallons of a vegetarian soup, maybe lentil, for people who don't eat ham or meat.

Now, about the soup, per 100 bowls:
8 pounds beans per 100 bowls
Best to soak overnight, about 3 gallons water, and drain. If not, boil 2 minutes, let sit 1 hour, drain, then proceed. Meanwhile, make your broth (or make ahead and chill or freeze):
Ham broth
5 gallons water
5 pounds ham hocks, smoked shoulder, or some such porky cured thing
Simmer at least 2 hours, remove meat. cool, pick over, remove bones, skin, any purely gristle pieces. Chop/shred the rest of the meat for the soup. Set aside.
Simmer the beans in the broth (or bake covered in oven at preheated 350) for at least 2 hours, stirring occasionally. Add water if needed, or leave the top off toward the end if it seems too thin.
When beans are tender, 2-3 hours, stir in about 2 pounds of shredded or finely diced carrots, 3 pounds of finely diced onions, the meat, and a teaspoon or 2 of pepper. I often saute these before adding, and I often add in a few quarts of chopped greens(parsley, kale, celery) and/or diced tomatoes in juice, or creamed corn. Simmer 30 minutes.
Mash up some of the beans to thicken, if you want thicker use 3-4 cups of potato flakes or stir in 3 cups of flour dissolved in 5 cups of cold water, then cook at least 15 minutes to thicken and cook off the raw taste.

Oh, Dani, have you got a slog ahead of you!

You know you have to get firm numbers of guests before starting your plan.
How long do you have before the wedding? What time and how long a party? What kind of kitchen? Where served? You know you have to have an appetizer plan as well as a menu, right? And you have calculated for 3 people roasting the pig, 4 in the kitchen prepping the other food and at least 18 out front to set up, serve and clean up this size party? These folks will not be at the wedding, they will be working, which usually means they will have to be paid.

You are talking probably two full pigs. If this is a group not used to cooking for this size party I strongly counsel you to make the pulled pork ahead, sauced and frozen, or hire an experienced pit crew. Grilling at a wedding reception for this many people is an invitation to trouble.

If you are considering taking this on as a paid event, be aware that wedding receptions are the most difficult catering job, because they have to be perfect, in the face of extreme situations, bridezillas, and everything else. Nothing ruins a semi-pro caterer's rep faster than a bad wedding.

If this is a family event, please have everybody involved read the wedding dinner article, then decide together how the work and expense will be portioned out. You are probably looking at 6-8 thousand dollars expense just for the food, cooking and serving equipment , at the simplest, if everything goes exactly right, which it rarely does.

Pancit Canton, Pancit Bihon, an Bam-i are all varieties of a stir-fried noodle dish.

You would do 20 times this recipe, but remember, you have to do it in batches:

Filipino Pancit
Serves: 12-16

Ingredients

2 lbs. uncooked noodles – this version used a combination of pancit and vermicelli
4 cups sliced mixed veggies: cabbage, carrots, bell peppers, and green onions
1 lb. lean pork, cut into very small pieces
˝ cup oil
1 onion, minced
1 tablespoon soy sauce
6 cloves garlic, crushed
1 pork bouillon cube
6 cups water

Instructions

Soak the vermicelli in water for about 5 minutes or until soft.
Brown the pork in the oil with the soy sauce, garlic, and onion.
Add the water and bouillon cube to the pork and bring to a low simmer. Add the vegetables and cook for 5-10 minutes. Add the uncooked pancit noodles and soaked vermicelli. Simmer over low heat until the noodles soak up all the broth.

Is it possible for 4 cooks to prepare meals cater for 900 people for 3-5 times a day? Do I need to find to employ more temps or do I need to plan food preparation properly in order to save times, money and avoid food wastages?

You are talking approximately 5 pounds of food per person per day. That is over 2 tons of food. 4 people can't even lift 2 tons of food, never mind prep and cook it.

two-three people/cooks for the first 100 plus at least 1 more for each additional hundred is kind of the minimum for the cooks, PLUS about 6 people per 100 to set up, serve and clean up. You are very short of help.

Hi, Greg, it depends on the age of the eaters and what else is served. Figure 1 pound per 8 with no other starches, or if teens, 1 per 10 for mixed adults.
Per pound pasta, 1 quart sauce, 1/2to 1 pound cheese.

You are looking at almost 500 pounds of foods, so safe storage and transport are critical.

Be aware that a party this size requires a large commercial kitchen with a manager, 4-5 people in the kitchen, 18-20 out front to set up, serve, and clean up a party this size. They will not be attending the wedding; they will be setting up.

Also that you MUST make an appetizer plan, and here is why:

A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area serves about 100 guests.

The only rice porridge I am familiar with is congee, which can be almost soupy, depending on how much water you use

Thick : 1 cup raw rice to 8 cups water (8-10 1 cup servings)
Medium : 1 cup raw rice to 10 cups water (10-12 1 cup servings)
Thin or Watery : 1 cup raw rice to 13 cups water (about 15 1 cup servings)

Looking for help with estimates for banquet dinner for 300. The salad, do 2 1/2 the amount for 100 on the buffet planning list, the extra included for seconds and large servings will cover your extra plates

brown rice will double in volume and weight when cooked, white rice typically just about triples

2.2 pounds long grain white/ 5 cups uncooked = 3 kg ( 25 cups / 6.5 lbs) cooked (Will serve 25 people, 3/4 to 1 cup servings)

(1 cup / 4 oz ) serving size might not be satisfactory for someone who is not concerned with weight management. and might seem paltry to them by today's serving standards until they got used to it

Mixed veg, 4 ounces frozen per person, minimum

You will need at least 3 serving lines, 4 or 2 double-sided would be necessary. 4-5 people in the kitchen and about 15 people out front to set up, serve, and clean up this size party, and these people will not be attending the wedding, they will be setting up the dinner. Plan ahead.

Helen, either of the wedding chickens on the Big Pots page can be made ahead, frozen if needed and hold very well.
The salad section of the plan for 100 planner has info on several salads for 100, including dressings, just pick what you like.
Oven baked rice pilaf is delicious with the chicken and very simple.
With 300, do have a crock pot of a vegetarian "chicken" entree for your non-meat eaters- you will have some.
This size party, 4-5 people in the kitchen and about 15-18 out front to set up , serve, and clean up the party, in a church situation a teen group can be a good server option, matching tee shirts with maybe a silk-screened logo is a great option.

Our menu:
135# tri tip.
30# hamburger
30# hot dogs
5# vegie burgers
20# mixed salad
6 10# cans of Bushes baked beans
200 hot dog and hamburger buns.
200 buns for tri tip sandwiches.
4 Watermelons
Cakes and pies by donars. Normally we have enough deserts.

Do the quantities fit the # of people?

Hey, Robert, good for you. A few items need tweaking.

20# mixed salad- 40 pounds at least, please. I do 12-15 per 100. Per 100, dressings: 12 8 ounce bottles or 3-4 quarts (1 gallon) salad dressing- more if thick and self serve
6 10# cans of Bushes baked beans- I do 4 per 100, so short- do increase

You would do well to add either a pasta or potato salad, 3 1/2 gallons per 100, or chips- 6 pounds potato or 8 pounds corn chips per 100 plus 1 pint dip/salsa/queso per pound of chips.

If you can offer a few dollars for the big remodel I am doing here at the kitchen, I sure would appreciate it! Thanks.

For the salad, use 1 1/3 times the amount of salad on the plan for 100 page.

For the potatoes, at least 60 pounds, and make sure there is one per person, and that is 3 roasters. Be careful- each one requires a separate electrical circuit and most rooms/sites have just 1.

Dawn, if you offer these two meat choices, almost everyone will eat beef. Sliced pork loin will be a much better choice. Also, is this for 300? You need an appetizer plan and it will require a staff of 4-5 in the kitchen and about 18 out front to set up, serve, and clean up. These folks will not be at the wedding, they will be working. wRITE BACK.

A general rule for marinade-to-meat ratio is ˝ cup of marinade per pound of meat. With these large amounts and thin marinades, about 1/3 cup per pound will probably be enough. Put the meat and marinades in baggies, so you can easily mix and press the marinade all over the pieces- do this several times. ALWAYS refrigerate, especially the chicken, and DO NOT put the marinade from the raw meat on the cooked meat unless you have boiled it first.

Marinades containing acid, alcohol, or salt should not be used for extended periods, use for less than 4 hours. Marinades containing citrus juice, especially lemon or lime juice, are for 2 hours or less, because food is left too long in these marinades can change color and texture. Blends that contain no salt, acid, or alcohol can be used overnight.

Chicken fingers depend on size, you want solid 5 ounces per person. x250=about 80 pounds

Rigatoni, make at least one pan meat free for ant vegetarians. 25 pounds pasta, 1 quart sauce per pound, 1 pound meatballs per pound; small is good here, looks and serves easier.

Most pros figure 1/4 to one third of the total cost is food cost. Be SURE to clarify whether the vegetable soup is vegetarian; if it is not, it would serve them to consider a vegetarian soup instead, such as a creamy potato, broccoli cheese, etc And you will be making more than half of each- with 2 soups, you have to have extra because they never eat exactly half and half.

Price some local caterers, such as Jason's Deli for comparison. Sandwich lunches are NOT cheap.

Beatrice, fresh tomatoes can be tricky for soup, due to the variation in acid content/ripeness, esp if you don't have a very long cooking time.

500 1 ounce servings is 1000 tablespoons,= 64 cups=16 quarts or 4 gallons. In other words, 1 regular "soup cup" serving (6 ounces) will serve 5. It's not a lot, you might want to make a bit more.

You might consider caramelizing the onions and/or roasting the tomatoes:

We will be having about 250 guests and are serving: spiral ham, grilled chicken breast, chicken rice, roasted red potatoes, green beans, mixed veggies, macaroni & cheese, rolls, tea and water. I'm curious as to how many pounds of chicken and how many spiral hams we should purchase, how many pounds of rice, potatoes, and veggies?! Any help or insight would be amazing. I haven't read through the post, however I'm about to now.

Lori, day of, a party for 400 needs 5 people in the kitchen and 20+ people out front to set up, serve, and clean up, and they can't be part of the wedding party- they will be working during the service. You need a LOT of help .

In addition, it requires 4 full service lines, or 3 double-sided lines, to serve everyone in less than an hour.

Also, many people don't eat pork, so if you are going for a pork entree, you must offer a second non-pork choice, as well as alternatives for any vegetarians, and in a party this big, there will be some.

Remember,the guests have spent 200-500 to be there, send a nice gift, dress for the event

Mashed potatoes for this many people is a difficult idea, I STRONGLY suggest a pasta or potato salad, or both, instead; also, think about the appearance of the plate!

For the green beans, 7 times the amounts in my better green been casserole for 60.

1 pound of ready to eat pulled pork serves 4. Offer 12 slider rolls per pound instead of 5 larger bun; less messy, and people eat a bit.

Customary to offer sliced pickles, 1 gallon per 100 and sliced onions, 8 pounds per 100, cole slaw 2 1/2 gallons per 100, and table sauce, 4-5 quarts per 100, with pulled pork sandwiches. In addition, t is usual to offer 3-4 items, not justy a single fruit tray, as an appetizer. The photo wait after the service is about an hour, and the last served will not get their food until almost 2 hours pass.

Cheese appetizer
10 pounds per 100, up to half can be cream cheeses, logs or spreads. 6-8 pounds crackers per 100. OK. Assuming this is mixed adults, lighter, a bit different from your list. If you want to sub sour cream for part of your cottage cheese, that would work.

Chicken Verde Enchilada casserole for 100
9 9x13 pans

1/2 cup canola oil
12 cup chopped onion
36 garlic cloves, finely chopped
24 jalapeno peppers, seeded and finely chopped
12 cup reduced sodium chicken broth
12 pound tomatillos, husked and quartered
6 tablespoons ground cumin, divided usage
1/4 cup sugar
1 tablespoon salt
1 tablespoon black pepper
6 cups chopped fresh cilantro
1 1/2 cups lime juice
1/2 cup dried oregano
36 cups chopped cooked chicken breasts (18 pounds)
18 cups Daisy Cottage Cheese
120 6-inch corn tortillas, cut in half
12- 4 ounce cans diced green chilies
12 cup finely shredded reduced fat Cheddar cheese (3 pounds)

Directions

Heat the oil over medium-high heat. Cook and stir the onion 3 minutes or until slightly tender; stir in the garlic and jalapenos. Cook and stir 3 to 4 minutes longer or until the vegetables are tender.
Meanwhile, in a blender container, blend the chicken broth and tomatillos until coarsely chopped. Stir the tomatillo mixture, 4 tablespoons cumin, sugar, salt and pepper into the onion mixture. Heat to boiling; reduce the heat and simmer 10 to 15 minutes until the tomatillos are cooked and the mixture is slightly thickened. Stir in the cilantro and set aside. In a cup, stir together the lime juice, oregano and 2 tablespoons cumin.
Toss half of the lime mixture with the chicken. Cover and refrigerate until ready to use. In another medium bowl, stir together the remaining lime juice mixture and the cottage cheese. Cover and refrigerate until ready to use. Heat the oven to 375 degrees.
Spray baking dishes with nonstick spray. Layer 1/3 of the tortilla halves in the bottom of a casserole dish, overlapping as necessary. Spread half of the cottage cheese mixture over the tortillas; top with half of the chicken, half of the diced green chilies, half of the Cheddar cheese, and one-third of the Verde Sauce. Add another layer with tortilla halves, the remaining cottage cheese mixture, chicken mixture, green chilies and half of the remaining Verde Sauce. Top with remaining tortilla halves and Verde Sauce.
Bake uncovered for 35 minutes, until just bubbly. Sprinkle with the remaining Cheddar cheese. Bake for an additional 15 minutes until heated through (180 degrees at center) and the Cheddar cheese has melted. Let the casserole stand for 5 minutes before serving.

I don't use them, what i can tell you is they serve about 1/2 what they say on the box. Plz consider doing steamed or roasted new potatoes- people spend 200-500 to attend, instant is not so yummy.

A really good veg rice for 60. Make 3 times if there are other starches or potatoes, or 4 times if it is the only starch.

I would definitely do the vegetarian option for this party.

Ingredients:
4 cups uncooked Parboiled Long Grain Rice (that is like uncle ben's)
2 cups uncooked Extra Long Grain Rice (adds texture)
1 Tbsp. salt
12 cups boiling water

3 quarts chopped celery
2 quarts chopped onions
1 1/2 cups (3 sticks) butter
4 12 ounce cans cream of chicken soup OR cream of celery soup
1 12 ounce can cream of mushroom soup soup
2 14-16 ounce cans chicken broth OR vegetable broth

Directions:
Place first 4 ingredients in large disposable aluminum pan (16x11x2-inch recommended). Cover tightly with
heavy aluminum foil.

To serve same day, bake at a preheated 350F for 35 minutes. Meanwhile, saute onions and celery in margarine until tender. Stir in remaining ingredients. Combine mixture with rice. Mix thoroughly.

To hold, cook at a preheated 350F for 30 minutes, chill rice immediately. Take out of fridge a least 2 hours before reheating, make the veggie sauce mix, stir in, bake at a preheated 350F for 30 minutes, until center is 180.

Hi Ellen, I am doing a wedding for 325 people. I am making homemade salsa with canned corn, black beans, red onions, roma tomatoes, jalps. and cilantro. Can you give me approx. amounts to make this and how many chips I would need. This will be an appitizer left out after the main meal along with bbq smokies and the left over meat, cheese, cracker tray from before dinner.

Having a friend do the chicken for my daughter's wedding. It will be fried rice, stir-fry veggies, and chicken chunks. What is your suggestion so the chicken is NOT dried out? Marinating it, cooking it in the oven, cutting into chunks, then freezing. thawing 2 days before the wedding and reheating. OR putting the chicken in the freezer in the marinating sauce, thawing the week of the wedding, cooking in the oven about 2 days before, cutting in chunks and reheating? We would have reserved marinating sauce for both ways so when reheating, she would pour the sauce over the chunks. Just don't want dried out tasting. For 300 people.

Absolutely DO NOT pour the marinade from the raw chicken into the cooked chicken; it is the perfect way to spread salmonella to all the guests.

First, I want to talk to you as mother of the bride;

On the wedding day, you and she want to have the day to yourselves. It is really important to find or hire a manager for the food so neither of you have to be in the kitchen- or the day becomes a food day, not a wedding day.

A buffet for 100 people takes about 3 kitchen people and at least 6 servers to set up, serve and clear away; a party for 300 takes about 6-8 kitchen people and 3 times as many servers. These can be volunteers, hired, church ladies, etc; but there needs to be some experience there. And none should be members of the wedding party. Any money you spend on this, will be among your best investments for the event. Do read my article on wedding dinners to see why.

You need to select a menu that offers non-meat eaters, of which there will be some, nice choices.

You need an appetizer area, it's critical. You also need an appetizer table (three actually) and here is why:

A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray, a cheese tray and an attractive dip or spread; or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area One serving area is needed for each 100 guests. In your case, I would probably do a Tex Mex theme, chips, salsa, a Mexican fruit tray and queso, maybe with nacho fixings, or guacamole.

Now about the chicken.

Reheating the chicken always dries it . Is there no way to refrigerator thaw 2-3days ahead, then cut it up and then bake day of?

And make separate fresh sauce to pour over. Also, take a look at my two wedding chicken recipes on he Big Pots page for how to make chicken that you CAN freeze and reheat.

Neither the bride nor the bride's mom should have any food responsibility day of.

I usually allow 10 pounds corn chips per 100 with 1 pint salsa/dip per pound, which works out to a gallon plus a quart per 100. I would probably do 4 gallons and expect a little left over.

Helen, I can't do costs for your area. Jollof rice is like fried chicken in the USA, there are MANY different recipes and seasoning, including some with scotch bonnet HOT peppers and some with no peppers at all. Here is a basic recipe you can work with.

West African Jollof Rice and Chicken

Jollof Rice and Chicken

Jollof Rice
25 medium onions, diced
1 cup minced garlic
OPTIONAL up to 20 inches peeled chopped ginger
OPTIONAL replace some of the spices with curry powder
1/4 cup dried thyme
50 cups (about 24 pounds) uncooked rice
200 ounces (about 3 quarts) Canned pureed tomatoes
75 cups (19 quarts) Chicken Stock or Water.
1 1/2 to 3 cups chicken bouillon powder if you use water
1/3-1/2 cup salt
1/3-1/2 cup paprika
1/3-1/2 cup white pepper
12.5 pound or more assorted chopped vegetables- these should be fast-cooking veg, such as frozen mixed veg blend. If frozen, thaw overnight in the fridge.
Scotch bonnet pepper or hot pepper- to taste, NEVER more than 1 per 6 people

Chicken Thighs
140 - pounds chicken thighs (at least 1 per person- 1 1/3 is even better
Jollof chicken spice blend- mix well
1/2 cup salt
3/4-1 cup onion powder
1/4 cup dried thyme or oregano
1/2 cup garlic powder
1/2 cup smoked paprika
1/4 cup white pepper
1/4 cup cayenne pepper
1/4 cup chicken bouillon powder (you may replace with salt)

Wash chicken thighs, dry with paper towels. Sprinkle both sides with generous amount of the spice blend (you may also use salt and pepper or your favorite spice mix)
Brown each piece in oil on both sides for about 3 minutes each, be very careful with the chicken, it shouldn’t burn.
Remove chicken from the pan and set aside.
Remove excess oil from pan, leaving enough to cook the vegetables for the rice.
Add onions, thyme, garlic and sauté until soft but not golden, about 2-3 minutes. Add the washed rice (see below), stir for another 3-5 minutes, till the rice just begins to color. In a family recipe this only takes 2-3 minutes. Takes longer with larger amount.
Washing the rice: Put the rice into a large bowl, cover with cold water and use your hands to wash the grains. Tip the water out, then repeat until the water runs clear. Usually takes 2-3 more rinses

Jollof Rice
Pre-heat oven 350 Degrees
Select your oven-proof pans that can also be heated on the stove top. You need to bring it to a boil before covering and putting in the oven.
Put the washed, sauteed rice in the pans with some of the cooking oil. Gently pour tomato sauce, dividing by the size of the pans. Then add all the remaining ingredients except the chicken and veggies; Chicken stock, paprika, white pepper, salt and bouillon. Add chicken, Bring to a boil.
Cover and place in pre-heated oven and cook for about 30 minutes then throw in the vegetables, cook until cooked another 15-25 minutes. Time depends on the size and depth of the pan. If it is too wet, remove the cover when you add the room temp veg. The middle of the pans should reach 180 degrees F. for food safety.
Remove from oven, serve promptly.

This size party, 4-5 people in the kitchen and about 15-18 out front to set up , serve, and clean up the party. At least 4 serving lines or3 double sided. n a church situation a teen group can be a good server option, matching tee shirts with maybe a silk-screened logo is a great option.

For a 16 ounce cup, plan 1 quart soup for 3 people=40 quarts=10 gallons. 8 ounces in a 16 ounce cup looks really pitiful. Each gallon weighs at least 8 pounds, so I suggest you look at 2 6 gallon pots, as 40 pounds of hot food is an (almost) doable lift- 80 is not. Or do 3 electric roasters, just remember hey have to be plugged in each on a different electric circuit which usually means different rooms. The convenience is you can serve straight from the roasters and they are cheaper than commercial pots.

I suggest you use three times this recipe:

4 gallons best quality chicken broth (I recommend Swanson low sodium)(some is absorbed in the noodles)

3 cups (about 3/4 pound) diced celery
1 pound diced onions
1 bunch parsley, chopped
2 bay leaves
1-2 pounds fine egg noodles

Cornmeal mush

This is more difficult that oatmeal, as its tendency to stick and burn is huge. Lumps easily. Needs to be stirred almost continuously...

On key is to mix the cold water in this recipe with the corn meal before you add it to the boiling water. This reduces the lumps.

Cornmeal mush for 120:

25 cups yellow cornmeal (I use cracked corn)
1/3 cup salt
6 1/2 gallons water, divided (for breakfast cornmeal, I use 1/2 milk to help balance the proteins)

For tasty breakfast style:
5 pounds butter
8 pounds brown sugar
1/4 cup ground cinnamon

For savory dinner polenta style:
8 pounds butter
8 pounds sour cream
10 pounds mozzarella cheese, shredded
pepper

DIRECTIONS

Preheat oven to 350°F Boil 5 gallons water. Dissolve cornmeal in 6 quarts cold water (if using cracked corn, skip this step and add it to total amount of water). Add cornmeal mixture to boiling water, stirring constantly. Turn heat to medium low, cover, stirring often. When it begins to thicken simmer for at least 30 minutes, until all the water is absorbed and the corn is tenderizing (not gritty).
Add butter, and seasonings, sour cream, cheese and spices, mixing very well, but slowly. Pour into buttered casseroles. 10 9x13 or 3 full steam table pans.
Bake for 50-60 minutes.
