Hello Ellen
Have a problem cooking turkey for a unknown amount.Christmas dinner for a get togather of do not know how many people.Cooking all breast I was thinking about maybe 6 breast.Now I am also having stuffing gravy corn mashed potatoes and a veg.
So what would you do?

Check the holiday cooking session and the turkey quantity yield lists. You have some idea of the minimum and maximum number of people. Use these guidelines to estimate your amounts- prepare the largest amount possibly needed for the mid range and have a supply of things that will keep such as marinated antipasto, etc. to bring out if the maximum number appear. Add at least 1 more holiday veg- broccoli, Brussel sprouts, creamed onions, etc.
Meat is a bit different, you need to look at your maximums. For example, you want at least 1 pound raw boneless breast for each 3 people- so if your max is 100, you need 34 pounds breast- if it is self serve buffet, you need to add another 10% as people eat more when they serve themselves.
