Check the holiday cooking session and the turkey quantity yield lists. You have some idea of the minimum and maximum number of people. Use these guidelines to estimate your amounts- prepare the largest amount possibly needed for the mid range and have a supply of things that will keep such as marinated antipasto, etc. to bring out if the maximum number appear. Add at least 1 more holiday veg- broccoli, Brussel sprouts, creamed onions, etc. Meat is a bit different, you need to look at your maximums. For example, you want at least 1 pound raw boneless breast for each 3 people- so if your max is 100, you need 34 pounds breast- if it is self serve buffet, you need to add another 10% as people eat more when they serve themselves. |
