i am cooking 200 pieces of boneless skinless chicken breasts that have been marinated in itailan dressing. what temperature, how long do i cook, & do i need to cover with foil. i want to keep in moist. i would like to cook the day before & just reheat? thanks! |

This is easy to overcook. Use an instant read thermometer to remove from the oven as soon as a breast in the center reaches 160. Use a 325 preheated oven, If a single layer uncovered, they can take as little as 20 minutes. If a full pan, packed or overlapping, they can take up to 40 minutes. That is why you need a thermometer. If you do not cover, the top/outside will dry out before the pan is fully cooked. You can take the cover off the last 8-10 minutes to dry or brown if you want. Are they going to be cooked and served, or will they be placed on a buffet? If a buffet, you need a light sauce or gravy on them to keep them moist. |

They are going on a buffet. Can I cook the chicken the day before & re-heat in a roaster? Since they are going to be marinated in itailan dressing, can i just put more on when i transfer to a roaster? |

Take a look at the wedding chicken recipe in Big Pots. This one reheats easily. The Italian dressing will not make a tasty sauce- try it- you'll see what I mean. A marinara/tomato sauce is a possibility. Cooking this chicken the day before and reheating will not give you a quality product. Try it on a small batch and see what I mean. |
