I cook 7 pounds of raw rice for 100 people. There are great recipes for beans for 100 and rice for 100 in the Big Pots section. You can use any of them for quantity guidance.

Cooking 1900 BBQ Chicken and Sausage plates. How many pounds of dry beans do I need if my serving size is 6oz? Same goes for Spanish rice. How many pounds of dry rice would I need with a #6 serving?

8 pounds of uncooked rice or beans makes approximately 100 2/3 to 3/4 cups servings- I assume when you say 6 ounces, you mean volume, not weight. Depends a bit on the add-ins, of course, but this will give you a start.

Dear Ellen,

Im planning to make a home made soynut butter. Do I need to remove the skin of the soy beans before roasting? What is the easiest way to remove its skin? I tried boiling in them in water then soaking in cold water, but still I have to manually remove the skin one by one (very tedious work), and also, I can't make my soynut butter with the same texture and smoothness like of peanut butter.

Thanks =)

Hi, Christian,
Unless you have a Champion type juice(which is more like a grinder) you are likely to bur up yur blender making soy butter. First soak until full size, then you can usually get the skins off. This is discussed in my article one making soy milk and tofu.
You are right to think the skins contribute to the texture, but you are unlikely to get preanut butter smoothness in your soy butter. Even some of the manufacturers can't achieve that.
