Fresh fruit VS Frozen

Hi,

I will need fruit trays for 100 guests and have figured out (about) how much of each I will need, but now wonder, because of the season, if I can use frozen fruit in addition to fresh. I have not had good results with frozen in the past and don't want mushy fruit the day of the party. Any help would be appreciated.

Frozen fruit gets mushy, no way around that. It is great in fruit salads, thawed in the refrigerator so it stays a bit icy, but not good as dippers on fruit plates. You can consider using fall fruits, citrus wedges, etc; just be sure to dip those apples and pears in orange juice, fruit fresh or strong lemonade to prevent browning. Maybe some fall exotics like mango, persimmon, papaya?
If you buy in the tray/box about a week ahead they will be ripe and less bruised than if you pick them out at the store. The produce managernat your grocery can order these for you "by the case" if you don't have a wholesale produce outlet where you can shop.
