You have to decide if you want hors douvres or a desserts and champagne/ punch reception. With a 7:30 wedding, they should ave eaten first, so you only need appetizer quantity, not meal quantity. Also, how formal? And what cooking, storage and serving arrangements? All these affect the menu, as does the budget.
