Lemon blueberry pancakes

I'm formulating a lemon blueberry recipe with lemon juice powder and baking powder for leavening. It foams and bubbles a lot in the bowl and seems to burn easily. Was wondering if the lemon juice would make it do that.
Perhaps I should use baking soda or partial baking soda. Was hoping I wouldn't have to do millions of trials before I get it right

Consider increasing the lemon flavor with dried peel and extract instead of juice. Fruit sugars in juices burn fast. Acid in juice sets off the leavening, and it will be worse, not better, with baking soda.
