Ellen, I see in one of your strands you reference stuffed cucumber cups as an apetizer...that sounds good and economical. Can you give the recipe (and the number it would feed)? I'd like to try it for a large reception. |

I use the English cucumbers. Run a fork down the sides after peeling for cuteness, slice into rounds like crackers or about 1 inch pieces for cups, hollow out with a peeler or grapefruit spoon, plop in the filling. So the number depends on the slices- people eat about 4 slices or about 2 cups. My favorite fillings are flavored hummues or shrimp salad... |
