My oving husband found a HUGE piece of meat that appeared to be a good deal ( There are 6 of us that I cook for daily). However this roast is 11 1/2 #'s I am thinking of slow gooking it whole and then once done seperate for Quick meals during the weeks to come. My dilema is this it's 11 1/2 # how long do I slow cook it for (it's whole). I am thinking of using a cooking bag to hopefully ensure that it is tender. Help if you can I will greatly appreciate it.

You lucky woman, I just this week finished my roasting beef page. This is a fairly tough piece of meat- too bad it is not top round- you can cut up a portion for stewing . See the meat base recipe in the once a month cooking section. If you do it whole, a cooking bag is a good idea, you want moisture and plennty of onions and seasonings added. I would do it at 250, about 50 minutes per pound. |
