We are having Roast Beef And Ham For our reception, how much of each should I purchase? There will be mashed potatoes and 2 veggies and 2 salads and pickles and dinner rolls and a desert. There will be about 200 people there. Thanks |

Usually for a mealtime party-type reception, most caterers allow 5 ounces cooked ready to eat beef and 3 ounces of the second meat (chicken, ham) ready to eat. That is 1 pound beef for each 3 persons PLUS 1 pound ham for each 5 persons. |

Bill, go straight to the church supper chili recipe on the chili page in big pots and make 2 recipes. Also, make some of those garlic dill pickles (same page) and ask for a dollar each. |

I'm having a wedding reception that will be for 200 people and we plan to serve BBQ brisquet, potatoe salad, cole slaw, red beans, and a garden salad. I'm not sure how much we need of everything can you please help ? Thanks Shana |

Shana, check the quantity tables on plan for 100 and the BBQ and brisket pages for the amounts for 100 and just double. For example 70 pounds of fresh potatoes to start the potato salad, 6 gallons beans, 4-6 gallons cole slaw. There is a section for several different kinds of green salad. I allow 1 pound raw brisket for each 2 persons for a party size serving, or at least 2 pounds for 5 persons- it shrinks a lot and is very fatty. |
