Go to the plan for 100 page and the beverages page, use 2/3 of the amounts indicated. The amount depends in part on whether this is a meal/ over a mealtime or a mid afternoon or later evening type reception. FYI, you need 5 shrimps per person minimum for served shrimp cocktails but figure 3 ounces peeled ready to eat shrimp any size per person for hors douvres. You want a total of 6 gallons of salad/bean sides, of which at least 2 1/2 to 3 gallons should be potato salad. But you will have mac salad leftovers if you make 3 gallons of mac salad. Usually you want a veggie type salad slaw, 3 bean etc to split the difference after the potao salad. |

Cooking for 80 In addition to the normal requirements. the people that I am cooking for have asked for Whole Salmons how many should I purchase for a party of 80. also what sort of quantities am I looking for with the stuff you have listed |

With whole fish, head on, you usually allow 3/4 to 1 pound raw weight per person if that is the only entree. You may need as little as 1/3 that if it is one of several entrees- caterers figure 3 ounces cooked ready to eat per person when it is the second entree. Not sure of your question/ what you mean by "the stuff..." |

Cooking for 70 I am having a BBQ block party for 70 people. Could you tell me the following: How many pounds of uncooked beef brisket will I need? How many pounds of salad will I need? How much beer (i.e. bottles)? How many pounds of uncooked pinto beans will I need to purchase? |

Check the plan for 100 page for brisket and salads and the Beans for 100 page and make 3/4 of the amount for 100. Brisket is a fatty meat that shrinks; for generous party portions I usually allow 1 pound raw trimmed for each 2 persons. Beer- 2 for the first hour, 1 for each additional is the usual allotment. If you buy from a place where they can be returned, you might add 10%. |
