Penne Bolognese for 60 to 80 as part of buffet

04/07/07 		Hi! I'm new to your pages, they are great!
I'm helping to plan a surprise party (between 60 and 80 guests) with a big buffet of mostly appetizers. We will have penne in bolognese sauce as one of two "main" dishes. (The other is beef and chicken kabobs.)

I think I need about 6 pounds of pasta, and enough sauce for that. Would you please tell me if that sounds reasonable, or do I need more? Thanks!

04/07/07 		Since everyone will take some of both entrees, I would suggest you go to 8 pounds plus necessary sauce, unless you are having a LOT of other appetizers (more than 12-15 bites per person).
