Wheat Gluten Recipe

I tried making my own wheat gluten for the first time. I used Ellen's Kitchen's Wheat MeatSteaks recipe, following it to the letter. The wheat gluten was very flavorful, but the texture was a bit rubbery. How do I correct that the next time? Could it have been the type of wheat gluten I used? I purchased it from TheMail Order Catalog for Healthy Eating. Any help you can give would be much appreciated.Thanks !

The straight gluten recipes can be pretty chewy! That's why I developed the unchuck recipe. The unchuck roast has a better texture, not rubbery- try it, you will like it.

You can grind the overly-chewy patties for a pretty good sausage or ground beef type recipe.
