Hi Ellen, I'd like to try your oven-roasted potatoes recipe for a group of 50. You say that you can boil the potatoes to cut down on cooking time....can I boil the potatoes a day ahead of time? and do I still need to cover the baking trays with tin foil when I bake them then? Thanks, Amy |

Yes, you can boil the day before, but it will add to the cooking time when they are cold to start. Yes, use the foil. You don't want to cook them done, just about 1/2 done; boil whole with the skin on. |
