Skewers for Kebobs and Rice Quantities

Hi Ellen:

I have a couple of questions that I am hoping you can help me with.

For 50 people how much rice should I make. I am serving chicken and shrimp kebobs, manicotti and two salads. The rice will have some veggies in it.

When making kebobs for personal use I use metal skewers. For catering I plan on using wooden ones. I have tried soaking them for up to a couple of hours and when I put them under the broiler they still burn badly. I thought of covering the ends with tin foil but was wondering if you have a more efficient suggestions.

I am starting my preparation for this event today and hope you can let me know about the rice and skewers.

Oh yes, how many baguettes would I need to serve for 50 people?

Since you have manicotti, you will do fine with 3 1/2 to 4 pounds of raw rice. Use salt water for the skewer soaking, soak overnight, and yes, foil works. But do not wrap each tip- pierce a row of skewers into a sheet of foil, then fold the foil down on either side of the row of sticks. You can still turn individually by twirling in the foil, or you can turn over the whole rack onto a second pan or cookie sheet

Do the bread by weight- 1 pound for each 5 to 6 people.
