04/18/07 		How many lbs. of head on shrimp do I buy to feed 95 people? Our shrimp man sells by the head on weight, but takes head off for you. I DO NOT WANT TO RUN LOW ON SHRIMP.

It depends a little on the size of the shrimp, small shrimp have more head than large- no matter how much shrimp you buy, you will not have too much, it is one of those foods that people just keep eating and eating... but good size ones for eating boiled, 1 pound raw head on shrimp is the minimum for 2 people, and up to 1 pound per person is not too much. Are you celebrating a large inheritance? If not, you might consider adding some fried, grilled or steamed fish to the menu.
