50th.Birthday reunion

I am having a 50th. reunion for my Sons Birthday. They are mostly,guys some wives coming. I am planning on cooking roast beef slicing it very thin and putting it in a large slow cooker to keep warm, with Au Jus. I want to serve salads with it. Can you suggest what I should serve? How much I woud need.It is a back yard do,help themselves.I thought the beef on a bun, salads,some sausages on buns.Birthday cake,ice cream and some fresh fruit afterwards. It is 1:00- 4:00pm open house.Open for advice!

The top section of plan for 100 has 6 different salad types with directions for 100 people. I would probably do a pasta salad- rotini pasta, maybe tricolor for looks- there are plenty of recipes on the site- and the marinated artichoke heart olive salad on this page (last recipe)

As to meat, I would estimate 3 ounces of ready to cook sausage and 6 ounces of raw boneless beef per person. They will eat somewhat less meat if you have a big pot of good beans along side.

Consider whether you want to have a hot dip or a mound of egg or seafood salad for your non-meat eaters.
