All the recipes that I found for soymilk require blending the soybeans before cooking them. I would like to soak, pressure cook and then grind the soy beans. Would that work? Any inputs would be greatly appreciated. |

Hi,Marcos, It does sound a lot simpler. doesn't it? You would get a creamy liquid which would be quite a bit thicker than regular soy milk and have different blending qualities. Why? Cooking the beans first will bind some of the proteins and fats differently, so they won't go into the water as they do with raw soy beans. You will also have double (all) the fiber and all the protein from the beans, unless you strain or filter the finished product, resulting in a different texture and much more noticeable separation or settling. I have prepared soybeans this way to make vegan cream of mushroom and cream of corn soup, it is very usable, but definitely not what most people mean when they talk about or use soymilk. On the other hand, as long as you soaked the beans thoroughly and cooked them well, you would have less of the reaction that causes the beany or bitter taste, and your consumers might like this.
