We are having an annual meeting and we are expecting about 300 people. We were going to make a fruit salad out of raspberries, blueberries, watermelon, cantaloupe, grapes, honeydew, and strawberries but we have no idea how much fruit to get. Any ideas?

Max, for party/dinner mixed beef and chicken fajitas, most caterers allow 5 ounces cooked lean boneless beef and 3 ounces cooked checken. You buy about 2 pounds bobeless raw lean beef for 5 persons, about 1 pound boneless skinless chicken for 4 persons. The toppings are about like the baked potato bar toppings- see the button at the top of the cook talk page.

Jan, even for this large a group, fruit trays are easier to assemble and refill. Fruit salads get picked over and get droopy. See the article on fruit trays (button at the top of the main cook talk page) for advice on quantities fruit selection and substitutions. If you are buying pre-made fruit salad, the amounts are there for both meals and receptions, also.

Hosting a kosher brunch for 25. How much lox should I order? For that matter, how much egg salad (lb), tuna salad (lb), bagels (pc), cream cheese (lb), quishes (pc), blintzes (pc), fruit salad (lb), breakfast potatoes (lb), juice and of course, lox (lb)would I figure per person? Everything to order is either by the pound or by the piece. Thanks for any input!

Jennifer you want about 1 1/2 pounds food per person.

Did you look at the breakfast plan for 100 chart? for 25, you want 1/4 the amount for fruit salad, potatoes, juice; if you think it will be 30+, use 1/3. Go light on the breakfast potatoes if they are potato knishes.

Per person:
1 each knishes and blintzes
1 1/2 bagels and 3 ounces cream cheese- you will have some left, but that is better than running out
1/3 cup each tuna and egg salad
3 ounces lox
You must also have capers and sour cream with the lox, and sour cream and applesauce with the blintzes.

i cater on the side and really have never had any problems because i've submitted the menu for my bid. they however want roast beef, baked turkey and baked ham for 100 people. i've came up with amounts but need reassurance. they are middle aged people and it's an evening meal. thanks! robin

I would aim for 4-5 ounces ready to eat beef PLUS 2 ounces ready to eat turkey PLUS 2 ounces ready to eat ham per person. You have to have extra because you can't run out of the first choice on the first round. Also, be SURE that it is written in to the contract that you are serving per person, or they may expect you to leave them all the remaining/left over meats (unless you are selling them trays or pans, in which case they do keep the remainders).

2-3 ounces lox per person. 4-5 ounces ready to eat salmon per serving (that's about 2 pounds raw for 5 people. I don't know how you are serving the whitefish, if it is baked/etc, it is like salmon; and the salad, 1/2 to 2/3 cup is an entree serving. I can't help on how many of each type you want, that depends on the taste of your particular crowd. You want about 36 servings total for 30 people, especially with multiple entrees.

See the fruit tray page and look at the tray for 25. I would change it up by using 2 3-4 pound pineapples, about 4 pounds seedless grapes and about 6-7 pounds of clementines for each 25 people. Use several colors of grapes and consider using some strawberries for color, add a mint leaf garnish.

20 pounds slaw veggies makes enough for 100. Here is an interesting dressing:

Dressing for 15 pounds
1 1/3 cup mayonaisse OR plain low-fat yogurt
1 1/3 cup canola oil
3 1/2 cups vinegar
1/2 cup honey, or more to taste
3 tablespoons paprika
3 tablespoons caraway seed
1 cup fresh dill weed, chopped
1/2 tablespoon celery seed
1 tablespoon salt
1/2 tsp pepper

At least one day ahead, combine dressing ingredients and whisk until well blended. Taste for balance, adding extra vinegar or honey if needed. Chill.
In a very large bowl, combine cabbage, carrots, onions, celery and parsley. Mix well. Chill.

Ah, the famous pancake mix question! Just in time for Shrove Tuesday.

The mix you plan to use has a serving size and weight on it. If the serving size agrees with your planned size, use this, adding 10% if your numbers are pretty firm. The mix makes better pancakes if prepared and refrigerated the night before. There is a breakfast planning table for 100. Button at the top of the main cook talk page.

Lisa, No, especially if it is buffet/ self service. You need to count on 5 ounces ready to eat bee PLUS 3 ounces (1 small) chicken breast PLUS 2 ounces veggie lasagna for EACH person, if you want to be sure to have enough and that everyone gets their first choice. Almost 2/3 of the people will take roast beef plus something else on self service.

Steve, it depends somewhat on the age of the crowd, the length of the party and whether alcohol is being served but 1/2 pound EACH raw ribs and raw brisket is about the minimum.

Mariyza, about 22 pounds. Preferably get converted rice (uncle Ben's) or basmati for the best texture and hold. The method is explained under baked rice on the recipebox page.

My church has to fix a lunch for about 200 soldiers during our Military Appreciation Weekend. We are planning on roast cornish game hens, rice salad with fresh veggies, bread and dessert. I am planning on 1/2 of a hen for each person. The big question is how much rice salad should I fix? I have a great recipe for Waldorf salad with rice or a rice with fresh veggies and a lemon vinaigrette. HELP!

Taylor, all these foods are covered on the appetizer planning page and the plan for 100 tables. There is also a discussion of how much the time of day affects the amounts you need. You use 1 3/4 times as much as you would use for just 100 people. Make your estimates. Then if you want to post it, I will check it for you.

Dana, If you have no other starch or vegetable, you need one cup per person. I would add at least a fruit salsa or spiced apple or peach, this is a light menu for mostly men.

Ceri, a party this size with this extensive of a menu usually requires at least 4 chefs, a commercial kitchen with at least 4 ovens and 18 servers. What do you mean you are doing it yourself? Please write further.

Also, I assume you know it is not legal to prepare food for sale in the home kitchen? And that you need a legal contract and event/liability insurance for this party?

As I have explained several times on site, this site is for family cooks, and not for professional (paid)caterers, so I don't do estimates for catering. I recommend chef2chef.com for pro caterers.

I would allow 1 pound ribs per person plus one piece or quarter of chicken; you will have some left, but everyone will get their fill and their choice. Caterers usually make food 30% of their cost and expect about 6-8% net profit- you have to pay your help, buy equipment and supplies as well, etc.

Lucy, I can't figure out what you are making and whether this is the only appetizer. Off the cuff, you want 1 ounce of bread, 1 ounce of cooked chicken, 1 teaspoon of pesto, 1 tablespoon of avocado, 1/2 ounce of cheese for each bite. You have to write more info if you want help.

Charlotte, OK If this was me, and about half the guests are your mom's age, I would count this as just 50, and not add for extras- elders don't eat as much. I would do 1 drumstick per person, PLUS 3 ounces ready to eat salmon (about 9 pounds whole) PLUS 2-3 ounces of sausage PLUS 3 ounces ready to eat ham PER PERSON; you will have some left, but the problem with serving this many entrees to 50 people is you need to have enough that everyone gets their first choice, and it doesn't even out the way it does in a larger group. You can make a pasta or vegetable dish that will serve as an entree for vegetarians and a side for everyone else, this simplifies the entree issue a bit.

You are short for 30 people unless they are very light eaters. A serving of rice is 1/2 to 3/4 cup, beans 1/2 cup, guac 1/3 cup, salsa 1/4-1/3 cup. Following minimums:

4 pints beans- 8 pints
4 pints rice- 10-12 pints
4 pints guacamole (all in 13x9x5" pans)- 10-12 cups
3 pints salsa- 4-5 pints
chips, 3 pounds corn chips minimum

Missy you can use my tables for 100 by taking 2/3 the amount for 100. You will need about 14-15 pounds of plantain and your two rices should start with a combined dry rice weight of 5 pounds of rice. Hi, I'm having a birthday party for my daughter and it's my first time throwing a party so I'm clueless! At the very most we will have 39 people but 12 of them will be children ranging in ages from 1-10. I plan on serving pizza, breadsticks, salad, and maybe fruit pizza and cake, of course. I think I read on here that you estimated 1/2 pizza person but of course the children won't eat that much. Do you think 15 pizzas would be enough? Also, how many breadsticks do you think I will need. And what about fruit pizza? I was thinking 5-6 because I think one is supposed to serve 8 people.

You need 1/3 the amount for 100 for this party. Figure 1 pizza for each 4 kids and 1 for each 2 adults. You don't need both fruit pizza and cake, but if you do have te fruit pizza, 3 would probably be plenty.

Krista, because it is popular and shrinks, you need to allow 1/2 pound per person, even though you also have chicken.

Jalene, the large cans do not contain a gallon! 4 cans is three gallons, which is the minimum for 100 people, if there is another vegetable; if it is the only vegetable. I allow 5 per 100. So you can figure it and remember the catering rule- always round UP if you have a fraction.

Kyndal about 55 pounds whole raw. 1/4 cup gravy per person would be plenty with this many being kids.

Rosie, I can't do the food unless I know the whole menu. It sounds like a brunch, but could be a reception?
coffee per the breakfast coffee on the beverage page. Mimosas, allow 1 cup per person. Fruit tea? Iced or hot? If iced, it will be mostly used by folks who don't drink mimosas. 3 gallons should be enough, plus plenty of ice.

ham biscuits, if these are pre assembled, you need 1 per person plus 10 percent. If you are serving the biscuits and ham separately, which I suggest, I would do 2 smallish biscuits per person (and skip the croissants) plus 2 slices of Canadian bacon or 1 1/2 to 2 ounces (2 little slices) ready to eat ham per person.
shrimp & grits, people will eat all the shrimp you offer. 3 1/2 to 4 1/2 pounds grits (depending on whether your guests are grits eaters), at least 12 pounds of shelled, head off, tail off shrimp

Gloria, Shank is easier to carve, usually a bit less expensive. Bone in raw weight, about 35 pounds minimum.

Rosie, I am puzzled. For 150 people you just use 1 1/2 times the amount for 100 people; for example, you would want frittata with 12 dozen eggs. The amount of spinach depends completely on the recipe you are using for th 12 dozen eggs, andf I don't have your recipe. Same for the bacon in the shrimp recipe. Multiply your recipe to get the right amount of shrimp, and you get the right amount of bacon.
I think you are making a mistake keeping the croissants and eliminating the Danish and cinnamon rolls, the quality of the latter two is usually better than the quality of commercial croissants, and people like them better.
You can use any kind of ham. Country ham (Smithfield type) is the fanciest, but for the extra the trouble and expense is not that much better than a good regular ham. Do get "ham" or "ham with natural juices" and avoid the ones that say water added.

You want about a pint per person, and most people mix 3 parts oj to 2 parts sparkling wine (quart of oj to bottle of wine) A splash of peach schnapps or orange liquor is mighty tasty in there. Consider using Freixenet Cordon Negro, extra dry is sweeter than brut; at about $12 a bottle, the Wall Street Journal calls it a great buy. I would put away 9 -10 bottles from someone who will accept returns of unopened bottles.

These figures are for served, if buffet, add 10%.

Bagels; size varies a LOT. 2 smallish or 1.3 great big per person. 1.5 if several flavors.

What about cream cheese? 2 oz. per person

Lox about 1 pound for every 8 people if it is a lox-loving crowd.
Tuna/ whitefish-I can't help with the split but you want a total of about 7 gallons
Fruit 1 pound every 4 to 5 (usually 4)
hummus, 1/4 cup per person
veggies, see veggie tray page; 2-3 ounces ready to eat per person
greens- see salad section at the top of plan for 100 page

Darlene this is a perfectly OK menu. 2 bites of each appetizer per person. 1 pound ready to eat pork for each 5 people PLUS 3/4 cup casserole per person (not all will eat it, but a fair number will take both). ALL the rest of the foods are on site and in the tables. Make your estimates. If you want to post them, I will check them for you.

Trish, you have to allow a half pound of fresh spinach per person for a large luncheon salad, or 1 pound for each 3-4 if it is the only side salad.

My team is helping to host a pot luck. We are supplying all non-alcoholic beverages, plus plates, napkins, plasticware, etc. Everyone is bringing their own alcoholic beverage and a dish. I came up with this list:

But I really don't know how many to add for each dish. Is 5 too little and 10 much too big. Can you give me a rule of thumb for this?

I may have to make a page about this, it comes up fairly often...

One thing you want to do, is try to keep costs about the same for everyone. You do this in part by dividing up the various categories differently, for example, meat/ entree for 6, but veggies or potatoes/rice for 10. Thus, you end up with different numbers of sign up slots under different categories.

I also help people out by putting examples under each category.

Here is a sample:

POTLUCK SIGN UP SHEET FOR 100 PEOPLE

Appetizers- 6 items- 16 servings= example 1 1/2 pounds cheese or 1 quart dip plus 18-24 ounces chips, crackers breads
Salad or veggie tray- 8 items- 12-16 servings= example 2-3 pound veggie tray with dip or 2 pounds salad with dressing
Main Course-16 items- 6 to 8 servings= example large whole chicken or 2 pounds meatloaf or 2 impossible pies or quiches
Veggies 6 items- 12 to 16 servings= example 9x13 casserole or 3 quarts/3 pounds veggies
Potatoes/rice, etc. 8 items- 12 servings= example 9x13 casserole or 3 quarts rice pilaf
Fruit- 10 items- 10 servings= example 12 inch fruit tray, 10 pound whole watermelon
Bread 6 items- 16 servings= example 2 loaves French bread, 16-20 rolls or biscuits plus butter or spreads
dessert- 8 items- 12 servings= example a 2 layer cake, 2 small pies, 9x13 cobbler or cake, 24 small cookies or bars.
Specialties- 10 items= please indicate item and amount- remember, everyone will want to try some!
Ice, Non-alcoholic Beverages, Paper goods will be supplied by the hosting team. BYOB for alcoholic drinks.

In most states it is not legal to prepare food in your home kitchen for resale.

I would make the sandwich fillings in bowls and serve the bread and condiments in baskets and let the men make their own sandwiches; it is VERY difficult to judge how many of each with this selection and once you make them up, if not eaten they are wasted. Use the guidelines for tuna/chicken salad for sandwiches to figure your quantities on the sandwich fillings and condiments, do not forget the mustard!

You need crackers, etc with the chili, see the recipe for help on these.

You also need 2-3 helpers on site, at about $80 each to set up, clean up and keep filled, unless you are just dropping off the food.

Usual catering charge for this meal, assuming beverages and cookies or something for dessert, about $11 per person- 3-4 times the actual food cost.

I would make 1 batch (serves 80-90) of church social chili and 4 gallons of rich, heavy veg and noodle chicken soup.

Per person: 2 bagels, 3 ounces lox, 1/3 cup egg salad, 6 ounces ready to eat fruit (do 1/3 of the fruit tray for 100) 2-3 biscotti, 1/2 cup orange juice or 1 cup if you are making mimosas, 1/2 bottle champagne unless they are very light drinkers. Tea and coffee, 1/2 the amount for breakfast coffee on the beverage planning page. You need cream cheese, 1 pounds per 6-7 people, and 2 or three good jams and jellies.
Strange as it may sound, some chocolate truffles, 2 per person, would be a very nice addition.

Jessica, do NOT fry turkeys the day of your wedding. If you must have this meat, make ahead, store and reheat according to the safe directions in the holiday cooking section at the top of Big Pots.

That said, you want to start with 3/4 pound whole raw turkey per person PLUS 1 pounds boneless ready to cook ham per 4 or 1 pound ready to eat per 5.

I am planning a high school graduation open house with two other families. We aren't sure on the number of people, but are guessing up to 300. There are other parties that day so not everybody will necessarily be eating a full meal. The open house runs from 1:00-4:00. We are serving pizzas but also have a fruit tray, veggies, popcorn and cake. Each pizza has 10 slices. We are planning on ordering 50 pizzas for a total of 500 slices. Do you think this is enough?

1 stick butter
1/2 cup sugar
1 teaspoon salt
1 egg beaten
1 cup warm water
4 cups all purpose flour
Dissolve:
1/4 cup warm water
t tablespoon sugar
1 1/2 package dry yeast
Blend butter, sugar, salt and egg then 1 cup warm water. Add 1 cup flour at a time to mixture to blend well.Place in a well grease bowl and cover and let rise then punch down and place in refrigerator. set out dough to rise about an 1 hour before rolling. Then roll out dough and cut out rolls and let the rolls rise about 1 hour before baking. Bake 400 degree or 425 degree it may vary depend on the oven. COULD YOU PLEASE HELP ME WITH THIS PROJECT. 1 bagel and 1 1/2 ounce cream cheese per person. one muffin per person, unless they are mini.

One of each kind of cookie (make them small- 3 bites) for each person. 1 cupcake per person plus 10%.

About 10 pounds of cheeses, consider having mostly balls/logs/spreads. About 10 pounds of crackers, probably have some left over.

Consider a few baskets of sliced artisan breads, 4 pounds whipped butter.

Bear, this is a very small group for this many entrees, which makes it hard to estimate, so here are a couple of questions:

Do you expect to serve 2 meals per person as it seems to be an all day event?

Do you mind if there are leftovers in order to make sure all get their main choice?

What are the sides? Heavy sides mean less meat.

What is the adult/ kid split (kids are preteens and younger)?

Is alcohol being served.

Write back with this info and I will give it a try.

Yes, their will be left over's for people to take home with them. So I guess to make it a little easier figure 70 people if this helps. We always over cook when we have get togethers. The children was not counted in the total people as I had read somewhere that 3 young children equal about 1 adult so therefore I didn't count any children under 12 cause the ones over 12 eat like horses.

We will have the following:

Appetizers - veggie tray, wings, chips.

Sides - Corn on cob (2 per), baked taters (1 per), cole slaw, macaronni salad.

I figured on getting just 5 lbs of kielbasa as I will smoke some of it early and slice up to put out with the appetizers.

No alcohol will be served as we are holding this in a public park and they do not allow it.

This is what I figured. 4 butts, 30 breasts, 30 quarters, 4 large slabs of ribs as not everyone eats ribs, and about 5 bags of wings.

We have planning our graduation party for my son in 2012. So as of August 2011 we have 1 year to save and start picking up things. Well we decided that we and famiy will help us make food, so a semi-potluck. Anyways, i have appointed everyone to a certain dish, but i don't know how much pans each to make. for example, my mom is making chili, should i tell her make 3 pans? I usually allow 2-3 pieces of bread per person, unless they are quite large.
The guac is OK, assuming you are adding tomatoes, etc.

Dips, 1/3 cup per person if only one, 1/4 cup of each if more than one (for 70, I would have 2-3, one creamy). 6-8 pounds potato chips or 8-10 pounds totilla chips per 100; you want about 3/4 that.

oh I just realized you may be talking actual physical plates, not servings; 2 plates per person at the hors d'ouevres table, 1 1/2 more at the dessert tabel, or 2 if there is both cake and dessert buffet.

This menu is a little light for this many people for breakfast, especially for protein, and you will probably run out of fruit. Also, if you are ordering cupcakes, you need to order 1 per person. I would skip the cupcakes and get muffins or pastries (mini Danish, for example).

I order 13 dozen breakfast bread for 100 people, counting 1/2 a large bagel as 1 bread.

Hi, my daughter and I are helping to cater a breakfast for the National Ovarian Cancer Coalition. There will be approximately 200 at the survivors breakfast. The fruit is already taken care of. My friend's husband is throwing her a surprise birthday bbq--chips and dips, etc for appetizers, then hamburgers, hot dogs, chicken are the main part of the meal. I'm bringing a side dish, a yellow squash casserole (yellow squash, onions, eggs, cheddar cheese and crackers are the basic ingredients) that my friend used to love when my mom would serve it at my family bbqs and am trying to figure out how much to make. I don't know what the other sides will be--other friends are bringing but think there will be at least 1 or 2 other sides, plus possibly corn on the cob. There will be about 24 adults and 12 kids, but apparently there will be mac & cheese as a side for the kids, as that's usually something kids like and he told me not to count the kids, though obviously if some kids want to try the squash, they're not gonna be stopped. So do I make a single half-chafing rack-sized foil pan, or do I make two of them? I attempted the math and figured that the pans that are around 2 1/2" deep hold about 16 cups.

The large number of choices makes calculating amounts much more difficult, and not knowing the coffee cake flavors doesn't help, so these figures are ball park. Make/cut everything small! People want to take several, and they will, and a lot gets wasted if the pieces are large:

blueberry and banana crunch muffins, total 250

sweet pecan rolls, 160 small

lemon honey pound cake, and 2 different coffee cakes.
Cut these small, 1/2 slices on the pound cakes. 300 pieces max total

Thanks, ellen. The single recipe calls for 2 pounds of squash, 1 onion (no size specified, so I'll sorta eyeball it), 2 eggs, 2 handfulls of bacon crackers and gets topped with the cheese after the rest of the stuff is cooked and mixed together. I was thinking to multiply by 5 (but maybe not the cheese topping, since there won't be 5x the amount of surface area), so I guess I was pretty close. I just don't know how many tins that will fill, so I'll make sure to have a few on hand and I guess I will learn by trial as to how much the ingredients collapse. By the way, I only found your site yesterday--it is so interesting and has so much helpful information. Cooking for 25 or 50, depending on what it is, okay. But 100? 300? Yikes!

A secret for cheap hors d'ouevres is home-baked breads, such as herbed flatbreads. You can use frozen dough (Rhodes is reliable, and the 100% whole wheat is tender and tasty). Thaw, bang the loaf out flat onto a medium size cookie sheet, pound/press in the toppings (Italian herb plus Parm, sumac and lemon peel herb, seeds and pepitas with a little chili, lots of possibilities), bake. You end up with a colorful assortment. When baked, slice lengthwise down the middle, then into sticks. About 1 loaf per 20, at about $1 per loaf.

Momos are delicious, but very labor intensive. Are you donating your time?

The flatbread is a great idea. What would you accompany it with? I'm thinking olive oil dip, tapenade, or sundried tomato dip.

I could also do samosas, which is also labor intensive but less expensive being the filling is potato rather than meat.

I also cut the loaves into 24 pieces, roll in cinnamon sugar, put 24 in a 9 inch pan, drizzle honey all over. Serve with cream cheese spread with a good fruit jam- sour cherry, apricot, etc.

A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, including a fruit tray, a cheese tray and an attractive dip or spread, plus a punch, or two if one is alcoholic, are sufficient.

One appetizer service area is needed for each 100 guests.

I am in charge of a pot luck for the gymnastics team there will be 85 people attending-
11 families from level 4,
9 families from level 5,
and 5 families from level 6

I don't know how to assign dishes, last year level 4's brought a main dish, level 5s brought a side, level 6's brought a dessert...but our numbers were completely different. (coaches bring drinks, cups,plates, etc)

help?

I'm so sorry, I was driving to work this morning and realized that i totally didn't tell you how many people. Number of People will be 175(approx)

She wants the Ham and Baked Ziti as the Main dishes. Crackers and Cheese as appetizers before hand and the rest to be sides with the dinner...I'm terrified of running out of food, yet I don't want to over spend...

Add fruit tray- 1 deluxe tray for 100 would be enough- and one dip or spread1/4 cup per person plus about 12 pounds of chips

Ham 88 lbs- OK
Pasta 22 lbs- dry weight, OK
Ricotta 44 lbs- OK, but too much for this much ziti
4 Cheese 22 lbs- OK
Lettuce 37 lbs- too much- see the salad section of plan for 100, use 1 3/4 times the amount for 100
Potatoes 50 lbs- OK. with the pasta, you may have some left
Green Beans 50 lbs- too much- 40 is plenty

In my experience, gymnasts eat like adults, so I would just count this as 85 people.

I would have level 4's bring a main dish for 8, level 5's bring a side dish for 10-12 and level 6 bring a dessert for 16. Explain that each of these is essentially a 9x13 dish or approximate equivalent. Have a few coaches and anybody who wants to bring extra, bring extra dessert- these always disappear fast.

Rose, the manufacturers' websites have pretty good recipes for the surimi/ crab legs, and there are chicken salad recipes on this site.

Lox, 3 ounces per adult, equal volume approximately of sliced onions. Slice, crisp overnight in the fridge in sugar water, drain.

For 60 people, buffet service, I would cook about 24 pounds pork and 15 pounds boneless skinless chicken breast.

A really good slaw, such as an Asian slaw, would be a nice second salad.

It depends somewhat on the mix of the crowd, the sides (soup? salad? dessert?) and the size of the buns. If it is ladies and the buns are the size of the bottom of a hamburger bun, 1 per person plus 1/4 more.

If smaller buns, or bigger eaters, 2 per person.

1/2 cup total filling per person. How to split it varies by crowd and region, but often abut 1/4 egg, 1/4 salmon, 1/2 ham...

Eve, count the kids as 2 kids=1 adult for this meal. Use the planning and shopping for large holiday meals article at the top of Big Pots, count it as 225 for calculations.

WIth the 3 meats, I would do 1/2 pound whole turkey PLUS 1/4 pound ham PLUS 1 small piece of meat pie for each adult serving. When there are several meats, people take more, and often some of each.

I am having 124 guests at my wedding and it will run from 2.00 p.m. until midnight. I am having trouble trying to figure out how many drinks (both alcoholic and non alcoholic drinks) I would need. For the non-alcoholic drinks I was planning on buying the 3L just juice bottles and 2.25L of coke etc. As for the alcohol we will be purchasing 24 packs of beer, mixed vodka drinks and burbon & cola & also wine bottles. Jill, are these separate from the casseroles? Because it is all ladies and dressy, they won't eat too much in the way of a separate potato side dish; 1 pound raw per 5 is actually fine, assuming there are some additions to the potatoes. If you mean just in the casserole, no more than 10 pounds.

We are having a buffet for about 32 to 40 of my sons college age friends. He wants a full meal.

Beverages;asst sparkling waters, a seasonal cocktail,wine and beer

Apps; assorted cheese and crackers. assorted meats, crudités, hummus, pita, latkes, apple sauce, sour cream and lox

Main course; roasted garlic and bacon mac and cheese, roasted lemon shrimp, salad and bread

Dessert;pizzelle, crispella, assorted candys, hot chocolate with candy cane

My question is how many pounds of pasta and how many pounds of shrimp do you suggest I use. The mac and cheese is very rich. When I make this dish just for my family of 4 with only salad and bread we only eat a half a lb.

OH! Another question I forgot to ask. Hubby is allergic to fish and my son broke his finger so a lot of the clean-up will be left to me. I have enough regular plates for everyone but would have to wash them without any help. We had thought of renting plates but I still would need to scrape and rinse them. So we've decided to use disposable plates. I'm just not sure if white plastic plates, chinette or if I can find them in a dinner size the clear plastic plates would be the sturdiest for standing and eating. What is your opinion?

40 college age guys are the equivalent of 50 normal eaters. 6 pounds of pasta, minimum.

Shrimp gets inhaled at parties. Get at least 1 pound per 3 shelled, and 1 pound per 2 would not leave a lot of leftovers.

You need about 25 pounds ready to cook pumpkin or winter squash- add some for seeds, peel.

For the salad, total of about 30 pounds of everything but the avocadoes, those you must do to taste- and depends very much on the size.

Here is the recipe for 4:

Spanish Cream
*Spanish Cream*
Serves 4

Light and delicious.

16 fluid ounces of milk divided (2 cups)
1 envelope of powdered gelatin (3 tsp)
2 large free range eggs, divided
2 1/2 ounces caster sugar (aprox. 1/3 cup)
1/4 tsp salt
1/2 tsp vanilla

To serve:
tinned fruit or jam

Measure out 4 ounces of milk into a small bowl. Stir in the gelatin. Set aside to soften.

Place the egg yolks into the top of a double boiler. Whisk in the sugar and then the remainder of the milk. Place over simmering water and cook, stirring constantly, with a metal spoon, until the mixture coats the back of the spoon. Remove from the heat. Stir in the softened vanilla and then pour into a large beaker and put into the fridge. Chill until partially set. (about 45 minutes)

Whisk the egg whites until stiff. Remove the partially set mixture from the fridge. Fold in the egg whites until completely mixed in. Pour the mixture into 4 serving dishes. Return to the fridge and chill until completely set. (about 4 hours)

Serve along with a topping of tinned fruit or jam.

You do not want to do it this way, it would take 11 pounds and those wrappers take forever. Either get the sheets of caramel made especially for apple use (Kraft makes them) or bulk caramel (www.daffyapple.com/c-5-bulk-caramel-for-caramel-apples.aspx) or cook up your own caramel- it takes a candy thermometer, but it is not complicated and is way cheaper.

I suggest you get mini's, and consider donut holes instead of full size donuts. You can substitute mini bagels for some of the other items. If you have really good pecan or cinnamon rolls, almost everyone will have one.

May I strongly encourage you to add fruit and cheese trays, and possible a big bowl of ice tucked full of fruit yogurts? And have butter and cream cheese (about 2 pounds each).

I never order less than 1 pound shrimp per each 5 people. For the rest, check the plan for 100 list and the sandwich page and get 1/3 the amount for 100. Basically, you want to end up with 4 gallons total of side salads.

With these entrees, I would only make 15-20 servings of fish, about 30 of chicken, 40 of beef, cut some of the chicken quarters into pieces, as many will take a piece of chicken with their beef. People take more, and some of each when there are several meats.

You want a baked fish dish with a sauce. Creole tilapia, or some such. I like cod better but it is more expensive.

Homeade Chex Party Mix
Hi! Great site! We are making homemade Chex party mix at the Groom's request for a wedding reception. We are going to put it in a Super large serving bowl near the bar and let people help themselves filling it up as needed throughout the night. Since this is salty and people tend to eat a lot of it..(It's super popular in our family and we make it as Christmas gifts) we know it will be a hit but we don't know how much to make for 160 people. Is there some kind of formula we could use? We are making a test batch this week to see how much one batch yields and just curious if you could give us some advice as to how much to make. cheesy potatoes, very popular, 2 full roasters, see the festive family brunch page at the bottom
corn, 22 pounds shelled, or 1 piece per person on the cob

If the rolls are good, you might make a few dozen more, and don't forget the butter- about 3 pounds per 100.

I would use the salad table on the plan for 100 page. I would do 2/3 the amount for 100 for the greens, 4 ounces chicken breast per person, 2 ounces tuna per person made into salad and 2 rolls. Dressings for the greens are covered in the table.

For the fruit, consider sliced fruit trays instead of fruit salad, people like it better. Use the fruit tray page- 2 of the trays for 25.

Syrup, 1/4 cup per person; strawberries, 1 quart per 8-10; whip cream, assuming the cans, 4 tablespoons per person. Have someone serve the sausages, if you can, people can get pretty greedy about them.

Consider adding scrambles eggs in the roaster; not everyone eats a lot of carbs, and they are not expensive. About 30 dozen eggs.

At this late hour, you will have a fairly light eating urge to deal with. Here is what I would do:

mini crab cakes- people love these, do 2 per person, 3 if the budget permits
meatballs- 1 pound per 5
chicken skewers- 1 pound raw boneless per 4
stuffed mushrooms- 2-3 per person, depends on size

I would add one bready/starchy, 3 bites per person

mini cheesecake, lemon blossoms, mini chocolate cake- one of each per person, plus some extra chocolate

I would serve dessert level coffee with the higher decaf amounts, unless it is a very young crowd.

We are throwing a birthday party with about 50 adults and 10 kids at 1:00pm. We are ordering the deli meat tray/rolls from a local place and side salad too. Our family is cooking the rest. We are going to have small tray of chicken nuggest and french fries for the 10 kids

Since the menu has some entrees besides the sandwich platters, what I would do is:

Deli meat/cheese platter with rolls- use the reception level plan on the sandwich page for 1/2 of 100, add extra rolls since people will want them for the sausages also.
Garden salad- about 6 pounds
Macaroni and Cheese- 4 to 5 pans (4-5 9x13 dishes)
Pierogies- sizes vary so much! 1 large or 1.3 small per person- maybe some left
Sausage and peppers- 1 pound sausage per 5-6

If the grits are the only starch, you need more. A really nice way to serve these is in the 8-9 ounce clear cups with the shrimps already portioned on. Would that work for you? Otherwise you need quite a bit more shrimp, as people just love it and gobble it.

You have plenty of meat. You need veggies, starches, fruit , some of this could be appetizers. Write back, start a new thread!

So glad I found this forum! I am thinking of making shrimp and grits for 100 men. Could you give me some estimates of how much grits to broth ratio and lbs of shrimp to serve this many? My recipe also has red bell peppers, cheddar cheese and Monterey jack cheese, canned diced tomatoes and green onions. My main worry is the grits/liquid ratio and lbs of shrimp. Thanks!!!

The grits to liquid ratio changes very little, as you need to do several batches.

Shrimp, at least 1 pound per 4, and 1 pound per 3 is even better, if this is a main course.

Here is a favorite note on cooking grits from foodservice.com:

Boil 1½ cups of water with salt and a little butter. (Use milk and they are creamier!)
Add 5 Tbsp of Grits.
Reduce to a simmer and allow the Grits to soak up all the water. When a pencil stuck into the grits stands alone, it is done. That's all there is to cooking grits.

The army uses 4 gallons of water, 1 tablespoon of salt, 1/2 cup of water and 4 1/2 pounds of quick-cooking grits to make 100 2/3 cup servings. 100 men might eat double that, if they were at all hungry and it was the main dish...

And here is a charming note from tristate.localfoodservice.com:

bring the water to a rapid boil and whisk in grits until I get a "reaction", or very slight thickening response, then quickly hold off on the H2O, otherwise you will end up with sheetrock mudd, or a great medium for sculpting. ;) At this point, unlike Grandma with her spoon prepared to stir for three hours, whisk like heck to assure that there are no lumps. If it thickens too quickly, add a bit more water, but not too much. Let simmer for about three to five minutes, reduce the heat, and slowly add a lot of butter. This could be anywhere from two to four sticks to four pounds....depends on how you feel about coronary health. You're going for a nice smooth texture with a slight gloss. After the butter is incorporated, begin whisking in heavy cream (or half & half if you're skeered) until the grits smooth out even more. Now it is safe to add the cheese. I have experimented with every form of white cheese from provalone to mozarella...go with something a bit sharper. A nice sharp white cheddar is good, and yes, as Steve said, regular cheddar works well......I just like to preserve the nice white color of the grits. Add as much as you think is necessary, then add another handful. At this point, you can graduate to a spoon...otherwise your forearms will look like Popeye.

I've read thru quite a bit of your helpful advice. I'm kind of coming to a conclusion, but want to run it by you first. I am making shredded chuck roast with onion soup mix and shredded chicken breast with BBQ sauce for sandwiches for a rehearsal luncheon. I'll also have a pasta salad, veggie and fruit platters, cookies and bars for dessert. For 35 people, I plan to buy about 15#s raw chuck roast and about 10# raw boneless skinless chicken breasts. Does this sound sufficient? Even if there are leftovers, that's ok. I just don't want to be short. Thanks for your help :)

Sounds like a tea party!

Take 4 slices of bread per person;
1/3 to 1/2 cup chicken salad per person (lesser amount if rushed or all ladies, more if relaxed or mixed)
1/4 cup pimento cheese per person
take a quart of mayo, 2 pints of tiny sweet pickles. Deviled eggs would be very nice with this.
1 pound chips per 12- a quart of salsa would be good for this
2 modest brownies per person

4 gallons tea, juice, lemonade

sauce- takes about 3 quarts per 10 pounds
table sauce- 1 cup per 6
onions- 7 pounds per 100
pickles- 1 gallon per 100

How about some good slaw? 3 gallons

Green salad, see plan for 100 table do just for 100 in you have slaw, or times 1 1/4 if the only salad.

I would definitely add chips here- allow 1 pound per 10-12. If dip or salsa, 1 pint per pound.

When the surges come and also how much food you need, depend on what day of the week and what time- for example, on a week night, many come starving from work.

Basically, this looks like a fairly dull presentation. Can you liven it up a bit?

Totals needed if it is NOT over a meal time:

Dips; 1/4 cup per person of each dip up to 4
Chips, etc; 1 pound per 12
Crackers; 6 pounds per 100
Cheeses, including logs and spreads, 1 pound per 10-12

Grapes, 1 pound per 10, seedless, several colors
Add strawberries, about 1 quart per 20
Fruit dip? 1 pint per 12-15

Nuts 6 pounds per 100 minimum- this is a very light service- they might take more

Talk to the hosts about adding meatballs or little smokies, or sausage bites (10-12 pounds per 100 plus 3 quarts sauce) or some other protein oriented bite- 2 bites per person.

This is a lot of salad with no carbs- hope there will be at least some good rolls or that the mystery salad is pasta or potato.

I would start with1 1/2 pounds spinach and add in the rest. Consider omitting the onions or put them on the side.

The people that run the community support program that hosts the non denominational service says that we need to prepare 150 sandwiches. We wanted to do something other than PB&J and thought that an Italian tuna salad sandwich would be tasty and last in the heat longer. Can you help with a recipe and if not a recipe an approximate amount of canned tuna we will need.

Dermot, any salad or chopped up filling spoils fast. What holds is sliced meats, sliced cheeses, falafel, hummus, etc; things that are solid and no mayo. Are any or all of those interesting? How about burritos? They can be kept hot and safe in a preheated ice chest.

I would do about 40 pounds of bone in chicken and 30 of pork belly. Do a bit more chicken if you have doubts about the popularity of the pork belly. Do be sure one of the sides will make an entree for any vegetarian guests.

It is a beer garden brunch the day after the wedding. Bagels with cream cheese, fruit, and cookies are being served along with the sandwiches. Not a sit down brunch more like a buffet and plastic plates will be used. Some kids will be there but not many.

The sandwiches are full bagels (not cut in half) with egg, cheese, and a meat on it.

This is an interesting idea, and there are a few things to consider.

Plan on at least a 2 sided serving line- it will move slowly as people select toppings, etc. Put beverage and desserts on a separate table.

Some people can't chew bagels. Do you want to do some of the sandwiches on croissants or as breakfast burrito roll ups? Maybe make some meatless for any vegetarians or non-pork eaters?

The fruit will be from the fruit tray page and I suggest fruit trays rather than salad, it keeps better, looks better and the leftovers are more usable. The deluxe tray for 100 would be about right- maybe add a couple of quarts of strawberries.

I would include about 4 gallons of pasta salad with lots of add ins, maybe the tri-color rotini for color, 8 pounds dry pasta.

Add nutella and peanut or cashew butter to the spreads, about 6 cups.

Seriously consider adding sliced cheese trays, about 6-8 pounds and egg salad, about 1 1/2 gallons.

A cream cheese and fruit dip, with ginger snap dippers, would go well with the plain bagels.

Plan on about 5 full sandwiches for every 4, 6 if you dont have too much other stuff, and cut some in half- nost kids won't take a full one.

Each bottle of champagne and quart of oj makes about 10 people's worth of mimosas, so you just need to figure how many people. Have seven up or ginger ale to make virgin mimosas for any non-drinkers and kids.

At least 4 cookies and bars per person, not large. People would rather have a wide selection than large pieces. You can put a tray or basket on each table, if there will be tables.

If you are serving, you want 5 pounds chopped onions per 100, 1 gallon hot dog chili per 100, 1 1/2 gallons slaw. If it is self serve, increase onions to 8 pounds, chili to 2 gallons, slaw to 2 1/2 gallons per 100- people take a lot more on their own. A dozen eggs makes 8-10 sandwiches, depending on how thick you spread it and what else you add it.

Use the spaghetti dinner for 50-60 at the bottom of the spaghetti page, do just over 1/2 as a guide for amounts.

I am planning to self cater my daughters wedding. It is casual, just family mostly but we have big families so planning on 180-200 people. I would greatly appreciate your advice re my plan. Am I crazy or is this doable? I plan to cook and freeze everything before hand and then thaw in fridge before warming and serving buffet style in chafers. I have hired a couple of people with food handlers permit to warm food and stock buffet on the day of the wedding. I am also renting a chambro food warmer to help with logistics. There are two full size -not commercial - ovens at the venue so I am hoping that we will have enough space to heat it all and keep it warm and safe. i plan to thaw food starting 3 days before wedding in the fridge. Venue has big walk in cooler and two fridges too. We get Venue day before so I plan to move food in coolers to venue.. I plan to have the food warmed in the food pans that fit the chafers. We have several and I will rent more so I can keep food to only 2'" deep so it should warm safely.
Several aunts will bring a variety of salads too.
Does this amount of food seem right? I have used your website to come up with these.I prefer to have too much. Menu I plan to prepare is:
Pulled pork sliders - 80 lbs uncooked
Shredded bbq chicken sliders - 80 lbs uncooked
432 slider buns
Hotdogs (mostly for kids) -60 (8/lb)
Mac n cheese - 20 lbs

Holly, this is possible, yet you have some thinking and rethinking to do, for both quantities and the menu. You are fortunate to get the kitchen the day before, but a whole lot of the work needs to be done before you ever get there. I would allow 3 days just for the shopping.

One of your biggest challenges will be refrigerator and freezer space for safe handling of the food. Remember you are looking at 300+ pounds of food. Also be sure you plan how to preheat the cambro, recalling the it takes up to 20 minutes to bring a gallon of water to the boil.

I am assuming 200 people.

Pulled pork sliders - 80 lbs uncooked- 40-50 plenty, still some left
Shredded bbq chicken sliders - 80 lbs uncooked- 40-50 plenty, still some left
Each pound boneless makes a pound with sauce, and each pound with sauce makes 5-6 sandwiches, or 10-12 sliders. So for 100 pounds total, you are looking at 500 sandwiches- I would do just 40 of whichever is less popular in your area.
Also, since you will need both ovens for the mac and cheese, consider reheating these on top of the stove, allowing up to 2 hours to get to 165 in the middle.
Meatless choice for any vegetarians- at least one crock pot of vegetarian sausages or patties.
PLUS add 2 gallons pickle slices and 12-16 pounds sliced onions for the sandwiches, table sauce for each table (about 1 cup per 8, up to 2 gallons)
For just 80 pounds total meat, you would use 400 standard buns or 800+ slider buns- see why what you have planned is too much?
Hotdogs (mostly for kids) -60 (8/lb)- bad choice for kids- choking hazard. If you want to do something specific, consider chicken nuggets or chicken legs. Do about 200 nuggets or 100 legs
Mac n cheese - 20 lbs, you need 20 pounds dry plus 20 quarts sauce plus 10-20 pounds cheese- comes out to about 10 gallons
Coleslaw - 6 gallons how many ponds of cabbage do I need? I plan to make coleslaw the day before.
Can make 2 days ahead, see the two slaw pages on this site for the crispest, tastiest slaw. You are looking at 50-60 pounds cabbage- see various recipes- suggest one sweeter and one with a vinegar type dressing

At this point, two additions; appetizers and cold starchy dishes.

For the starchy dishes, I suggest either 4 gallons each of 2 interesting salads such as a marinated many bean salad, corn and black bean salsa, carrot raisin salad, antipasto marinated veg, or roasted Italian veg served room temp. All of these are made ahead and do not require heating.OR 6-8 gallons of potato or pasta salad (pasta is easier), 6 pounds dry pasta or 30 pounds potatoes per 100

For the appetizers or nibbles, here is my standard suggestion:
A self-catered buffet is a real challenge to the organizers, and things don't always come together as smoothly as hoped. By planning and setting up an appetizer area or "nibble table" which is ready when the guests begin to arrive, the cooks and servers have time to complete the arrangement of the dinner buffet. This is especially critical if there are children among the guests, or there is a wait before dinner, as at a wedding reception.

This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray (see the fruit tray page), a cheese tray (8 pounds per 100, some can be spreads or logs; 6 pounds crackers per 100) and an attractive dip or spread (1 cup per 6 plus 6 pounds potato or 8 pounds corn chips per 100); or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits.

One appetizer service area serves about 100 guests. So you would use 2.

Write everything down as you do it or plan it, including volunteer assignments with time lines - who will get how much ice by when?-who will bring the plates cups, napkins by when? Your name should be in very few of these slots.

I will save so much money and logistics will be a bit easier with less food to heat up. Now I won't worry there won't be enough. You gave me some great ideas and guidance. I figure 6 pounds shredded cheeses for 80, light shreds. , and the rest depends on what kind of veggies and meats, for example, 8 ounce canned mushrooms, once drained, makes 4 people's worth; 1 pound diced onion or bell pepper or chopped broccoli florets makes about 10 omelettes.

The meat depends entirely on what kinds of meat and whether other breakfast meats are being served. Can you tell mre?

Anyway, unless you are using frozen waffles, waffles for 100 is not a simple task. I suggest chicken and biscuits instead. Side dishes of a colorful veg and an interesting side dish such as a spiced peach, apple ring, etc.

The soup is fine, it might be you do beef if the main dish is chicken.

Least expensive drink, assorted flavorful iced teas you brew yourself.

Simple dessert, fruit cobbler.

Consider other canned fruit, such as sliced peaches; applesauce looks messy on the plate and is hard to eat without a spoon.

I am trying to prepare a ham and broccoli florets and smoky cheese quiche. The recipe calls for: 1 CUP of CHOPPED HAM. I bought 1 lb. of sliced ham from the deli. 1 lb. = 16 oz. For a LIQUID 1 CUP = 8 OZ. SOLIDS ARE DIFFERENT IN BAKING.

1 1/2 eggs per person makes a generous serving of egg salad. So, about 6-7 dozen eggs.

2-3 ounces of tuna makes a generous serving of tuna salad, it depends on what your recipe adds in- more add-ins, less tuna. So, 8-9 pounds for lesser, up to 12 pounds for meatier - do check on the extra large cans available at the warehouse stores.

With the herring, you might just go with he lesser amouns-

Tuna or egg salad may be safely kept up to 72 hours in a fridge at 40 or below.
