Max, for party/dinner mixed beef and chicken fajitas, most caterers allow 5 ounces cooked lean boneless beef and 3 ounces cooked checken. You buy about 2 pounds bobeless raw lean beef for 5 persons, about 1 pound boneless skinless chicken for 4 persons. The toppings are about like the baked potato bar toppings- see the button at the top of the cook talk page. Tammy, everything yuu need to estimate the fruit salad is at the fruit tray page, button at the top of the cook talk page. If you want, U will check your estimate of you post it. |

Jan, even for this large a group, fruit trays are easier to assemble and refill. Fruit salads get picked over and get droopy. See the article on fruit trays (button at the top of the main cook talk page) for advice on quantities fruit selection and substitutions. If you are buying pre-made fruit salad, the amounts are there for both meals and receptions, also. |

Jennifer you want about 1 1/2 pounds food per person. Did you look at the breakfast plan for 100 chart? for 25, you want 1/4 the amount for fruit salad, potatoes, juice; if you think it will be 30+, use 1/3. Go light on the breakfast potatoes if they are potato knishes.

I would aim for 4-5 ounces ready to eat beef PLUS 2 ounces ready to eat turkey PLUS 2 ounces ready to eat ham per person. You have to have extra because you can't run out of the first choice on the first round. Also, be SURE that it is written in to the contract that you are serving per person, or they may expect you to leave them all the remaining/left over meats (unless you are selling them trays or pans, in which case they do keep the remainders). |

2-3 ounces lox per person. 4-5 ounces ready to eat salmon per serving (that's about 2 pounds raw for 5 people. I don't know how you are serving the whitefish, if it is baked/etc, it is like salmon; and the salad, 1/2 to 2/3 cup is an entree serving. I can't help on how many of each type you want, that depends on the taste of your particular crowd. You want about 36 servings total for 30 people, especially with multiple entrees. |

Ah, the famous pancake mix question! Just in time for Shrove Tuesday. The mix you plan to use has a serving size and weight on it. If the serving size agrees with your planned size, use this, adding 10% if your numbers are pretty firm. The mix makes better pancakes if prepared and refrigerated the night before. There is also a recipe for "out of the trash bag walking taco salad" that will give you amounts to serve 25- link at the top of the texmex page. Lisa, No, especially if it is buffet/ self service. You need to count on 5 ounces ready to eat bee PLUS 3 ounces (1 small) chicken breast PLUS 2 ounces veggie lasagna for EACH person, if you want to be sure to have enough and that everyone gets their first choice. Almost 2/3 of the people will take roast beef plus something else on self service. Karen Ann, you need 1 pound for each 5 people, assuming other items are also offered. |

Steve, it depends somewhat on the age of the crowd, the length of the party and whether alcohol is being served but 1/2 pound EACH raw ribs and raw brisket is about the minimum. You use 1 3/4 times as much as you would use for just 100 people. Make your estimates. Then if you want to post it, I will check it for you. Dana, If you have no other starch or vegetable, you need one cup per person. I would add at least a fruit salsa or spiced apple or peach, this is a light menu for mostly men. |

Ceri, a party this size with this extensive of a menu usually requires at least 4 chefs, a commercial kitchen with at least 4 ovens and 18 servers. What do you mean you are doing it yourself? Please write further. Also, I assume you know it is not legal to prepare food for sale in the home kitchen? And that you need a legal contract and event/liability insurance for this party? As I have explained several times on site, this site is for family cooks, and not for professional (paid)caterers, so I don't do estimates for catering. I recommend chef2chef.com for pro caterers. |

I would allow 1 pound ribs per person plus one piece or quarter of chicken; you will have some left, but everyone will get their fill and their choice. Caterers usually make food 30% of their cost and expect about 6-8% net profit- you have to pay your help, buy equipment and supplies as well, etc. |

Lucy, I can't figure out what you are making and whether this is the only appetizer. Off the cuff, you want 1 ounce of bread, 1 ounce of cooked chicken, 1 teaspoon of pesto, 1 tablespoon of avocado, 1/2 ounce of cheese for each bite. You have to write more info if you want help. Charlotte, OK If this was me, and about half the guests are your mom's age, I would count this as just 50, and not add for extras- elders don't eat as much. I would do 1 drumstick per person, PLUS 3 ounces ready to eat salmon (about 9 pounds whole) PLUS 2-3 ounces of sausage PLUS 3 ounces ready to eat ham PER PERSON; you will have some left, but the problem with serving this many entrees to 50 people is you need to have enough that everyone gets their first choice, and it doesn't even out the way it does in a larger group. You can make a pasta or vegetable dish that will serve as an entree for vegetarians and a side for everyone else, this simplifies the entree issue a bit. |

Hi, I'm having a birthday party for my daughter and it's my first time throwing a party so I'm clueless! At the very most we will have 39 people but 12 of them will be children ranging in ages from 1-10. I plan on serving pizza, breadsticks, salad, and maybe fruit pizza and cake, of course. I think I read on here that you estimated 1/2 pizza person but of course the children won't eat that much. Do you think 15 pizzas would be enough? Also, how many breadsticks do you think I will need. You need 1/3 the amount for 100 for this party. Figure 1 pizza for each 4 kids and 1 for each 2 adults. You don't need both fruit pizza and cake, but if you do have te fruit pizza, 3 would probably be plenty. |

Jalene, the large cans do not contain a gallon! 4 cans is three gallons, which is the minimum for 100 people, if there is another vegetable; if it is the only vegetable. I allow 5 per 100. So you can figure it and remember the catering rule- always round UP if you have a fraction. |

ham biscuits, if these are pre assembled, you need 1 per person plus 10 percent. If you are serving the biscuits and ham separately, which I suggest, I would do 2 smallish biscuits per person (and skip the croissants) plus 2 slices of Canadian bacon or 1 1/2 to 2 ounces (2 little slices) ready to eat ham per person. shrimp & grits, people will eat all the shrimp you offer. 3 1/2 to 4 1/2 pounds grits (depending on whether your guests are grits eaters), at least 12 pounds of shelled, head off, tail off shrimp spinach fritata, 8 dozen eggs turkey bacon, 2 slices per person turkey links, 2 small per person cinnamon rolls, muffins, danish, mini croissants; get the smallest ones, about 90 each small rolls and mini muffins, 120 small Danish, skip the croissants and use the good biscuits as discussed in the ham biscuit section. Gloria, Shank is easier to carve, usually a bit less expensive. Bone in raw weight, about 35 pounds minimum.
Rosie, I am puzzled. For 150 people you just use 1 1/2 times the amount for 100 people; for example, you would want frittata with 12 dozen eggs. The amount of spinach depends completely on the recipe you are using for th 12 dozen eggs, andf I don't have your recipe. Same for the bacon in the shrimp recipe. Multiply your recipe to get the right amount of shrimp, and you get the right amount of bacon. |

I may have to make a page about this, it comes up fairly often... One thing you want to do, is try to keep costs about the same for everyone. You do this in part by dividing up the various categories differently, for example, meat/ entree for 6, but veggies or potatoes/rice for 10. Thus, you end up with different numbers of sign up slots under different categories. I also help people out by putting examples under each category. Trina, as I have said before this is a site mostly for home cooks and volunteers, and I recommend the pro catering sites for paid caterers: chef2chef.com cheftalk.com In most states it is not legal to prepare food in your home kitchen for resale. I would make the sandwich fillings in bowls and serve the bread and condiments in baskets and let the men make their own sandwiches; it is VERY difficult to judge how many of each with this selection and once you make them up, if not eaten they are wasted. Use the guidelines for tuna/chicken salad for sandwiches to figure your quantities on the sandwich fillings and condiments, do not forget the mustard! You need crackers, etc with the chili, see the recipe for help on these. You also need 2-3 helpers on site, at about $80 each to set up, clean up and keep filled, unless you are just dropping off the food. Usual catering charge for this meal, assuming beverages and cookies or something for dessert, about $11 per person- 3-4 times the actual food cost. I would make 1 batch (serves 80-90) of church social chili and 4 gallons of rich, heavy veg and noodle chicken soup. |

Yes, their will be left over's for people to take home with them. So I guess to make it a little easier figure 70 people if this helps. We always over cook when we have get togethers. The children was not counted in the total people as I had read somewhere that 3 young children equal about 1 adult so therefore I didn't count any children under 12 cause the ones over 12 eat like horses. We will have the following: Appetizers - veggie tray, wings, chips. Sides - Corn on cob (2 per), baked taters (1 per), cole slaw, macaronni salad. I figured on getting just 5 lbs of kielbasa as I will smoke some of it early and slice up to put out with the appetizers. No alcohol will be served as we are holding this in a public park and they do not allow it. My friend's husband is throwing her a surprise birthday bbq--chips and dips, etc for appetizers, then hamburgers, hot dogs, chicken are the main part of the meal. I'm bringing a side dish, a yellow squash casserole (yellow squash, onions, eggs, cheddar cheese and crackers are the basic ingredients) that my friend used to love when my mom would serve it at my family bbqs and am trying to figure out how much to make. I don't know what the other sides will be--other friends are bringing but think there will be at least 1 or 2 other sides, plus possibly corn on the cob. There will be about 24 adults and 12 kids, but apparently there will be mac & cheese as a side for the kids, as that's usually something kids like and he told me not to count the kids, though obviously if some kids want to try the squash, they're not gonna be stopped. So do I make a single half-chafing rack-sized foil pan, or do I make two of them? I attempted the math and figured that the pans that are around 2 1/2" deep hold about 16 cups. |

The single recipe calls for 2 pounds of squash, 1 onion (no size specified, so I'll sorta eyeball it), 2 eggs, 2 handfulls of bacon crackers and gets topped with the cheese after the rest of the stuff is cooked and mixed together. I was thinking to multiply by 5 (but maybe not the cheese topping, since there won't be 5x the amount of surface area), so I guess I was pretty close. I just don't know how many tins that will fill, so I'll make sure to have a few on hand and I guess I will learn by trial as to how much the ingredients collapse. By the way, I only found your site yesterday--it is so interesting and has so much helpful information. Cooking for 25 or 50, depending on what it is, okay. But 100? 300? Yikes! |

A secret for cheap hors d'ouevres is home-baked breads, such as herbed flatbreads. You can use frozen dough (Rhodes is reliable, and the 100% whole wheat is tender and tasty). Thaw, bang the loaf out flat onto a medium size cookie sheet, pound/press in the toppings (Italian herb plus Parm, sumac and lemon peel herb, seeds and pepitas with a little chili, lots of possibilities), bake. You end up with a colorful assortment. When baked, slice lengthwise down the middle, then into sticks. About 1 loaf per 20, at about $1 per loaf. Momos are delicious, but very labor intensive. OH! Another question I forgot to ask. Hubby is allergic to fish and my son broke his finger so a lot of the clean-up will be left to me. I have enough regular plates for everyone but would have to wash them without any help. We had thought of renting plates but I still would need to scrape and rinse them. So we've decided to use disposable plates. I'm just not sure if white plastic plates, chinette or if I can find them in a dinner size the clear plastic plates would be the sturdiest for standing and eating. What is your opinion? |

40 college age guys are the equivalent of 50 normal eaters. 6 pounds of pasta, minimum. Shrimp gets inhaled at parties. Get at least 1 pound per 3 shelled, and 1 pound per 2 would not leave a lot of leftovers. |

Here is the recipe for 4:
Spanish Cream Light and delicious.
16 fluid ounces of milk divided (2 cups)
To serve: Measure out 4 ounces of milk into a small bowl. Stir in the gelatin. Set aside to soften. Place the egg yolks into the top of a double boiler. Whisk in the sugar and then the remainder of the milk. Place over simmering water and cook, stirring constantly, with a metal spoon, until the mixture coats the back of the spoon. Remove from the heat. Stir in the softened vanilla and then pour into a large beaker and put into the fridge. Chill until partially set. (about 45 minutes) Whisk the egg whites until stiff. Remove the partially set mixture from the fridge. Fold in the egg whites until completely mixed in. Pour the mixture into 4 serving dishes. Return to the fridge and chill until completely set. (about 4 hours) Serve along with a topping of tinned fruit or jam. |

You do not want to do it this way, it would take 11 pounds and those wrappers take forever. Either get the sheets of caramel made especially for apple use (Kraft makes them) or bulk caramel (www.daffyapple.com/c-5-bulk-caramel-for-caramel-apples.aspx) or cook up your own caramel- it takes a candy thermometer, but it is not complicated and is way cheaper. |

With these entrees, I would only make 15-20 servings of fish, about 30 of chicken, 40 of beef, cut some of the chicken quarters into pieces, as many will take a piece of chicken with their beef. People take more, and some of each when there are several meats. You want a baked fish dish with a sauce. Creole tilapia, or some such. I like cod better but it is more expensive. |

Homeade Chex Party Mix Hi! Great site! We are making homemade Chex party mix at the Groom's request for a wedding reception. We are going to put it in a Super large serving bowl near the bar and let people help themselves filling it up as needed throughout the night. If the grits are the only starch, you need more. A really nice way to serve these is in the 8-9 ounce clear cups with the shrimps already portioned on. Would that work for you? Otherwise you need quite a bit more shrimp, as people just love it and gobble it. You have plenty of meat. You need veggies, starches, fruit , some of this could be appetizers. The grits to liquid ratio changes very little, as you need to do several batches. Shrimp, at least 1 pound per 4, and 1 pound per 3 is even better, if this is a main course. Here is a favorite note on cooking grits from foodservice.com:
Boil 1½ cups of water with salt and a little butter. (Use milk and they are creamier!) The army uses 4 gallons of water, 1 tablespoon of salt, 1/2 cup of water and 4 1/2 pounds of quick-cooking grits to make 100 2/3 cup servings. 100 men might eat double that, if they were at all hungry and it was the main dish... And here is a charming note from tristate.localfoodservice.com: bring the water to a rapid boil and whisk in grits until I get a "reaction", or very slight thickening response, then quickly hold off on the H2O, otherwise you will end up with sheetrock mudd, or a great medium for sculpting. ;) At this point, unlike Grandma with her spoon prepared to stir for three hours, whisk like heck to assure that there are no lumps. If it thickens too quickly, add a bit more water, but not too much. Let simmer for about three to five minutes, reduce the heat, and slowly add a lot of butter. This could be anywhere from two to four sticks to four pounds....depends on how you feel about coronary health. You're going for a nice smooth texture with a slight gloss. After the butter is incorporated, begin whisking in heavy cream (or half & half if you're skeered) until the grits smooth out even more. Now it is safe to add the cheese. I have experimented with every form of white cheese from provalone to mozarella...go with something a bit sharper. A nice sharp white cheddar is good, and yes, as Steve said, regular cheddar works well......I just like to preserve the nice white color of the grits. Add as much as you think is necessary, then add another handful. At this point, you can graduate to a spoon...otherwise your forearms will look like Popeye. |

Hi Ellen, I've read thru quite a bit of your helpful advice. I'm kind of coming to a conclusion, but want to run it by you first. I am making shredded chuck roast with onion soup mix and shredded chicken breast with BBQ sauce for sandwiches for a rehearsal luncheon. I'll also have a pasta salad, veggie and fruit platters, cookies and bars for dessert. For 35 people, I plan to buy about 15#s raw chuck roast and about 10# raw boneless skinless chicken breasts. It is a beer garden brunch the day after the wedding. Bagels with cream cheese, fruit, and cookies are being served along with the sandwiches. Not a sit down brunch more like a buffet and plastic plates will be used. Some kids will be there but not many. The sandwiches are full bagels (not cut in half) with egg, cheese, and a meat on it. |

This is an interesting idea, and there are a few things to consider. Plan on at least a 2 sided serving line- it will move slowly as people select toppings, etc. Put beverage and desserts on a separate table. Some people can't chew bagels. Do you want to do some of the sandwiches on croissants or as breakfast burrito roll ups? Maybe make some meatless for any vegetarians or non-pork eaters? The fruit will be from the fruit tray page and I suggest fruit trays rather than salad, it keeps better, looks better and the leftovers are more usable. The deluxe tray for 100 would be about right- maybe add a couple of quarts of strawberries. I would include about 4 gallons of pasta salad with lots of add ins, maybe the tri-color rotini for color, 8 pounds dry pasta. Add nutella and peanut or cashew butter to the spreads, about 6 cups. Seriously consider adding sliced cheese trays, about 6-8 pounds and egg salad, about 1 1/2 gallons. A cream cheese and fruit dip, with ginger snap dippers, would go well with the plain bagels. Plan on about 5 full sandwiches for every 4, 6 if you dont have too much other stuff, and cut some in half- nost kids won't take a full one. Each bottle of champagne and quart of oj makes about 10 people's worth of mimosas, so you just need to figure how many people. Have seven up or ginger ale to make virgin mimosas for any non-drinkers and kids. At least 4 cookies and bars per person, not large. People would rather have a wide selection than large pieces. You can put a tray or basket on each table, if there will be tables. You know you need coffee- see the beverage planning page. You can write back. I am planning to self cater my daughters wedding. It is casual, just family mostly but we have big families so planning on 180-200 people. I would greatly appreciate your advice re my plan. Am I crazy or is this doable? I plan to cook and freeze everything before hand and then thaw in fridge before warming and serving buffet style in chafers. I have hired a couple of people with food handlers permit to warm food and stock buffet on the day of the wedding. I am also renting a chambro food warmer to help with logistics. There are two full size -not commercial - ovens at the venue so I am hoping that we will have enough space to heat it all and keep it warm and safe. i plan to thaw food starting 3 days before wedding in the fridge. Venue has big walk in cooler and two fridges too. We get Venue day before so I plan to move food in coolers to venue.. I plan to have the food warmed in the food pans that fit the chafers. We have several and I will rent more so I can keep food to only 2'" deep so it should warm safely. Several aunts will bring a variety of salads too. Does this amount of food seem right? I have used your website to come up with these.I prefer to have too much. Holly, this is possible, yet you have some thinking and rethinking to do, for both quantities and the menu. You are fortunate to get the kitchen the day before, but a whole lot of the work needs to be done before you ever get there. I would allow 3 days just for the shopping. One of your biggest challenges will be refrigerator and freezer space for safe handling of the food. Remember you are looking at 300+ pounds of food. Also be sure you plan how to preheat the cambro, recalling the it takes up to 20 minutes to bring a gallon of water to the boil. I am assuming 200 people.

For the appetizers or nibbles, here is my standard suggestion: This does not have to be complicated. Three items, plus a punch, or two if one is alcoholic, are sufficient. Typically, include a fruit tray (see the fruit tray page), a cheese tray (8 pounds per 100, some can be spreads or logs; 6 pounds crackers per 100) and an attractive dip or spread (1 cup per 6 plus 6 pounds potato or 8 pounds corn chips per 100); or you can go with a dinner theme such as TexMex with chips, salsas, Texas caviar and guacamole; Italian with bruschetta or antipasto; maybe shrimps or other cold seafood, if budget permits. One appetizer service area serves about 100 guests. So you would use 2. Write everything down as you do it or plan it, including volunteer assignments with time lines - who will get how much ice by when?-who will bring the plates cups, napkins by when? Wow, what a quick and thorough response. Thank you so much. I was a bit worried it would be too much food128512;but I hate to run out or for people to be hungry. I will save so much money and logistics will be a bit easier with less food to heat up. Now I won't worry there won't be enough. You gave me some great ideas and guidance. I will definitely follow your advice. As I work on planning more I may ask more questions. At this point logistics are my biggest concern. I just made a modest donation. I figure 6 pounds shredded cheeses for 80, light shreds. , and the rest depends on what kind of veggies and meats, for example, 8 ounce canned mushrooms, once drained, makes 4 people's worth; 1 pound diced onion or bell pepper or chopped broccoli florets makes about 10 omelettes. The meat depends entirely on what kinds of meat and whether other breakfast meats are being served. Can you tell mre? Is this baby dogs or malware? Anyway, unless you are using frozen waffles, waffles for 100 is not a simple task. I suggest chicken and biscuits instead. Side dishes of a colorful veg and an interesting side dish such as a spiced peach, apple ring, etc. The soup is fine, it might be you do beef if the main dish is chicken. Least expensive drink, assorted flavorful iced teas you brew yourself. Simple dessert, fruit cobbler. |

The breakfast planning page has amounts for you for the foods, and juice and coffee are on the beverage planning page. Price frozen concentrate for the juice, fake oj is not so tasty. Consider other canned fruit, such as sliced peaches; applesauce looks messy on the plate and is hard to eat without a spoon. |

1 1/2 eggs per person makes a generous serving of egg salad. So, about 6-7 dozen eggs. 2-3 ounces of tuna makes a generous serving of tuna salad, it depends on what your recipe adds in- more add-ins, less tuna. So, 8-9 pounds for lesser, up to 12 pounds for meatier - do check on the extra large cans available at the warehouse stores. With the herring, you might just go with he lesser amouns- Tuna or egg salad may be safely kept up to 72 hours in a fridge at 40 or below. |
