cooking meal for large.. how much do I make??

HELP!
I'm planning a banquet meal for a sports group.
There will be approximately 110 adults and 40 kids under 12.

How much food do we need?
What I thought was:

perogies (4/person)
cabbage rolls(small) (2/person)
ham (1/2 lb/person)
macaroni salad (33 cups uncooked macaroni)
carrot and raisin salad (35 cups carrots & 10 cups of raisins)
golden glow jellied salad (made with 16 jellos and 5 lbs of apples/1 lbs celery)
buns (20 dozen)

Is that going to be enough or too much???
HELP!!

The banquet is in a week and a half!!!

This will make a great buffet. You will have a lot of macaroni salad left, and buns left over. If you have ovens at site and are not aiming for a cold buffet, you might consider macaroni and cheese, very popular with kids and will reduce the anount of meat you need.
Most kids will eat no more than 1 cabbage roll, 1-2 pierogi, and you could safely countjust 2-3 pierogi per adult with the large amount of meat you are allowing. Hope you will be buying these ready-made? It is a lot of work to do both these by hand.
By using thinly sliced, deli type ham, you will need about a 1/3 of a pound and make it easier to make the ham sandwiches on the buns.
Use an assortment of buns, or substitute some good rye bread for part of the buns- 1 pound loaf equals 8 buns.
What about some great cookies for dessert? And don't forget mustard (yellow and grownup, such as Dijon), mayo, coffee, cream and sugar, and a beverage for the kids. Maybe also iced tea if you are in an iced tea drinking area and the weather is appropriate

Hi, Lucinda,

I am not clear whether this is a main dish at dinner, or an appetizer, or what exctly? This really affects the amount you need.

The basic approach for an entree is 1/4 of a chicken per person. Also, wings have gotten chronically expensive since the popularity of Buffalo wings. Legs or leg quarters are often the best buy.

Cut up chicken is available in 40 pound boxes, you would want three.

How are you planning to cook these?

Turkey- 200 pounds whole turkeys
Dressing- 12 gallons
Green Beans- 9 #10 cans- For traditional casserole, I have used 6 cans French style green beans, 3 cans chop suey vegetables, all drained, 12 family size cans cream of mushroom soup, 2 #10 French fried onions crushed to top
Mashed Potatoes- 12 gallons
Gravy- 6 gallons
Cranberry Sauce-40 regular cans, or 20 quarts of cranberry relish
Pumpkin Pie- 36 pies- you need more if you use 2 kinds, as people love to have some of each.
Don't forget coffee, tea, rolls, butter.

Hi, Bruce,

There are so many brisket meals, I have started a brisket- only thread- please check. Brisket is a fatty meat, allow 1/3 pound per adult, and if the kids are mixed ages, the teens will balance the little ones,, so use the same for them- See above for green beans etc. Sherbet, I allow 2/3 cup per person instead of 1/2 cup unless you prescoop and freeze the individual servings ahead of time- and kids do like cones-

I am having a 50th birthday party for my husband this Saturday. I plan on making maidrites for one thing. My question is...
I'm planning on making 30 lbs of hamburger.
How many buns do you suggest? I'm planning on around 60 people...maybe more, maybe less, but I want to have enough. They will be all adults and big eaters! I'm going to have the maidrites in a big electric roaster and it will be self-serve, since it's a "party" party. Thanks!

Hi, my daughter is planning a wedding in November and is planning on xapx 250 people. The reception meal is to be Roast Beef, Mashed Potatoes, Mixed Vegetables, Mixed Veggie Salad, and Rolls. Kristina- allow 6-8 ounces of meat and cheese per person, have it pre sliced and don't forget the mayo, mustard and oil and vinegar. Having sliced tomatoes, sliced bell pepper and lettuce will reduce the amount of meat and cheese. Sliced olives, pickles and sweet banana peppers are a very attractive additon.

Bobbi- macaroni salad: 1 pound of macaroni will serve about 8-10 people for salad (depends on how much other stuff).

Jean- broccoli salad: I am not familiar with this recipe! If broccoli slaw is like cabbage slaw, 1 pound makes about 6 generous servings.

Dean and others- pinto beans: as a side dish, with potato salad, barbecue etc, 8 pounds made plenty for 150 people. As a main dish, with a small amount of meat on the side, I have cooked 6 pounds for 50 people and had almost none left. Go figure! This is one reason estimating amounts can be a littlwe tricky. Fortunately, leftover bean dishes freeze very well.

I have always eyeballed it when I cook for groups, but it has been a very long time since I prepared for that many and I don't want to have too much-but certainly don't want to run out since the tickets were pre-sold!
Can you give me a quantity for 50 so we can calculate that way? we are going to be shopping Nov 1 and 3 - Saturday and Monday probably. We are going to use prepared sauce and additional seasonings so

Also, can french toast be made on a griddle and kept warm over a sterno heated aluminum roaster with water underneath? Can eggs be baked? If using aluminum serving pan, will they turn green? My Fiance and I are getting married on Sept. 25th, 2004. We will be making our own food (well, with my Mother's help and some other people). There will be about 150 guests.
We thought about going with the traditional ham/beef/turkey, mashed potatoes or little round pot./corn, green beans, rolls butter and gravy, perhaps a salad.
My Fiance are more into cold stuff, ie..Mac and pot. salad, sandwiches, chips, pretzels, ring bologna, cheese, etc.
My Mom is freaking b/c of how many people, and not wanting to do all this herself, etc. We thought about hiring a caterer, however, we thought that might be too expensive.
We also thought about doing a mexican style..tacos, quesidillas, enchilladas, salsa chips, etc.
Could you please help? Do you think people will be "picknicked" out by the end of Sept? Will they like Mexican?? THANKS

I am planning a wedding reception(Dec.2004) for 100 people, with dinner served buffet style. We are having roasted turkey, baked ham, mashed potatoes, baby carrots, kernel corn and dinner rolls. We will have appetizers before dinner during a cocktail hour. And salad will be served before the buffet. How many 20lb turkeys and how many lbs od ham will I need? How many lbs of raw potatoes should I buy? How many lbs of carrots and how many cans of corn?

The amount of food is affected by the amount of beer or liquor and the starting tme of the game!

Think in 3 parts for a 5 hour gathering: dips/appetizers, sandwiches, and coffee/ dessert,

For the sandwiches, Allow 3 ounces of sliced cheese and 5-8 ounces of deli sliced meats per person, this makes 2 big sandwiches, plenty especially if some are ladies. So you need 3 dozen good rolls or 3-4 loaves of good bread. To cut the meat consumption, add at least one heavy salad such as bean or potato salad (or baked beans, scalloped potatoes or mac and cheese in a crockpot, or a baked potato bar). Mustard, mayo, ketchup. 2 heads of lettuce coredm rinsed and broken for sandwiches, 2-3 pounds tomatoes sliced ditto, a bowl of sliced olives or peppers,1-2 big red or sweet onions thin sliced and soaked overnight in the refrigerator in water with a few tablepoons of sugar added. Offer some baby carrots along with the chips.
An appetizer of chili con queso will reduce the amount of sandwiches eaten.

2 9x13 pans of cake, brownies, etc, or 4-5 pies.

You're on your own about the chips and beer!

Deli sandwiches are an expensive meal for what you get. Consider home baked ham, brisket or meatloaf, homemade pizza or ordering out a giant sub-

With three entrees, beef, chicken and kielbasa, it is very hard to estimate amounts of each, unless yu could poll your members informally and ask them? If you are buying everything ready-made, check out the Buying for 100 pages I just put up- in the Big Pots Section, for quantities, and don't forget the butter, mustard etc. Just guessing, I would get about 100 peoples' worth of beef, 70 chicken and 40 sausage. If you serve buffet style, people often take some of each entree.
If you are making the green bean casserole with canned green beans, use chop suey vegetables for 2 of the 8-9 #10 cans, it is a delicious improvement over the straight green beans.
Get an assortment of small rolls, 18-20 dozen, you will need 8 pounds of butter.
Get a little more kraut than you think you need. Some people who don't eat sausage will want some.
What about dessert, coffee, etc?

For 100 people, you will need a good 50 pounds of potatoes, people really like them. If you assemble the casseroles with hot milk you will cut the cooking time, but 50 pounds still takes over 2 hours to bake in one oven. Be SURE to use baking potatoes not red new potatoes.
You can use any favorite recipe. Thin rings of very finely sliced onion layered in are a fine improvement on the basic recipe.

About scalloped potatoes,if you make ahead and refrigerate the uncooked potatoes, you will haqve to add 50-100% to the cooking time.

It depends on which shape/ size pasta you use: 8 pounds per hundred people for rotini or large pasta shapes, up to 12 pounds for little macaroni elbows, plus your fixin's- celery plus leaves, parsley, dressing olives diced tomatoes, etc. Ellen

So, as of April 14, I have finally posted all my tables for "serving 100 people", including breakfasts, appetizers, parties, BBQ/brisket, etc etc. This is the best estimate I can make on how much you will need for any given item, and there are LOTS of things listed.

Go to the Big Pots section and scroll down to the planning section; go to the page for what you want and you can figure out your quantities.

REMEMBER, these are serves 100- that means they already allow for seconds, etc- more than 100 servings.
