Hello Deborah, Meat Balls are the easy part you could either buy them already made and today there are some really good products out there, or figure on making them fresh you'll want to figure 3 meatballs per person scooped and rolled at 2.5 to 3 onces for cooking yeild when you come up with that then you need to decide how much raw product you will need always make more cause you will be able to use them for other things if you have them left over. (chicken) baked chicken is perfect for that you want to figure 1-2 pieces per person you can buy chicken at cash and carry stores by the case, usually 40 pound cases you'll probable need (1) case. Some people can't eat meat so your nect seletion should be some sort of fish, Salmon is really good but exspensive, but cod or Haddock are really great alternatives probably 30 pounds cut into 4-6 ounce pieces and baked or broiled is perfect for that, if you need any more help please write back!!Bill |

Please go to the big pots section and scroll down for full planning information on party food for 100. There are tables for meats, salads, etc. Then just couble the amounts. Deviled eggs, count as hor doevres and each 1/2 counts as 1 piece. I make 4 1/2 dozen boiled eggs to make deviled eggs for 100, some will etar up and not be stuff-able. Leave eggs out at room temp 24-48 hours before boiling they will be easier to peel. If you turn the cartone over carefully so the point end is down, the yolks tend to center better. Bring to a boil with eggs completely covered with water, cover, and start checking at 10 minutes (pull one out, run under cold water, open and check for doneness. As soon as done. pull off the fire, drain how water, and keep filling with cold tap water or(or add water and a bag of ice) until they are cool. Do not peel and stuff until the morning of or at most the night before. It takes about 1 hour to peel 100 eggs and about 1 hour 25 minutes to split and stuff them. For this many yolks, I mash the yolks and mash in 1 cup spicy mustard and 1/3 cup good vinegrette, adding extra vinegrette to get the right texture for the yolk mix. |

I'm cooking for a wedding party of 200 in approximately 3 weeks. The menu consists of ham and roast beef sandwiches, potato salad, coleslaw salad, baked beans, relish tray with dips. My questions to you are how do it determine in the quanity to make? Do you have any recipes for any of the salads for that many people. How much meat will I need for the sandwiches? This is my first time in doing this and it is for a friend. I hope that I will do a good job. Could you help me out with any ideas, asap. I would greatly appreciate it.

I use 10 pounds dry beans- 60-70 cups cooked for 100 people for a good serving. I have made 6 pounds for 50 people when they were hungry and bwan lovers. Don't omit soaking and pre-rinsing. |

As mentioned in the serves 100 section, I start with 25-35 pounds of potatoes per 100 people, and do the recipe from there. You want 3 1/2 to 4 gallons for 100 people. |

Allow around 7-8 gallons for 200 people if you are also serving slaw and beans. You want about 20 gallons TOTAL side dishes, including everything. |

Hello Ellen, I offered to make homemade baked beans for my friends open house. They are planning on 200-225 people. My recipe calls for a 3 Pound Jar of Randall's pre-cooked navy beans. I would provide 6-7 gallons of baked beans for this size group. So make one recipe and measure it, then yuou will know how many times to multilply. 1 #10 can is about 3 to 3 1/2 quarts of beans. |
