Spice Blends and Herb Mixes

Store herb blends in a dark, cool, dry place up to six months. Because light and heat weaken spice flavors, it's better not to display seasonings on open racks above or near cook tops or ovens. Store seldom-used seasonings in the freezer to maintain freshness.

Cajun Seasoned Salt

1 pound iodized salt
3 tablespoons black pepper
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon nutmeg
2 tablespoons parsley flakes, crushed
4 tablespoons red pepper or cayenne, ground
2 tablespoons chili powder

Combine all ingredients, store in an airtight container.
Yield: 3 cups

Generic Taco Seasoning Mix, single serving
Makes about 3 tablespoons, the equivalent of a 1 1/4-ounce package of taco seasoning mix. Make as hot or mild as your family likes.

1 tablespoon minced dried onion
2 teaspoons Mild Chili Powder
1 1/2 teaspoons salt
1/2-1 teaspoon garlic powder
1 teaspoon cornstarch
1 teaspoon ground cumin
1/2 teaspoon oregano
1/2 to 1 teaspoon cayenne pepper or hot paprika
1/4 teaspoon sugar (optional, used in the commercial mixes)

Put the onions in a small bowl or cup. Add the spices one at a time, stirring well. Stir to blend.

Green Herb Blend

1 tablespoon dried thyme
1 tablespoon dried oregano
1 tablespoon dried rosemary
1 tablespoon dried marjoram
1 tablespoon dried basil
1 tablespoon dried parsley flakes

Crush or chop the rosemary,combine all ingredients; store in an airtight container. Use with eggs, to season fish, vegetables, or chicken. Some folks add: 2 tablespoons rubbed sage

Yield: 1/2 cup.

Crab Boil/ Seafood Seasoning

Use whole spices for crab or shrimp boil, ground for seasoning fish or chicken.
1 tablespoon ground bay leaves
2 1/2 tablespoons celery salt
1 1/2 tablespoons dry mustard
1 1/2 tablespoons black pepper
3/4 tablespoon ground nutmeg
1/2 tablespoon ground cloves
1/2 tablespoon ground ginger
1/2 tablespoon paprika
1/2 tablespoon red pepper
1/4 tablespoon ground mace
1/4 tablespoon ground cardamon

Combine all ingredients; store in an airtight container. Use with seafood or chicken.
Yield: 1/2 cup.

Greek Seasoning Blend

Sprinkle this over your Greek Salad, chicken or lamb.
2 tablespoons salt (may omit or use lite salt)
2 tablespoons oregano
1 tablespoon whole dill weed
1 1/2 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon cornstarch
1 tablespoon pepper, ground, Optional
1 tablespoon beef-flavored, vegetable, or tomato flavored bouillon granules
1 tablespoon dried parsley flakes
1 teaspoon dried mint
1/2 tablespoon ground cinnamon
1/2 tablespoon ground nutmeg
1 tablespoon ground dried lemon peel
1 tablespoon whole or cracked sesame seeds, Optional
Combine all ingredients; store in an airtight container.
Yield: 3/4 cup.

Chinese Five Spice Blend

2 tablespoons anise seeds, crushed
2 tablespoons freshly ground pepper
2 tablespoons fennel seeds, crushed
2 tablespoons ground cloves
2 tablespoons ground cinnamon
1 1/2 tablespoons ground ginger
1/2 tablespoons ground allspice

Combine all ingredients; store in an airtight container. Popular to rub or marinate pork, tofu, or fish.
Yield: 3/4 cup.

Creole Seasoning Blend

1 tablespoon salt
1 1/2 tablespoons garlic powder
1 1/2 tablespoons onion powder
1 1/2 tablespoons paprika
1 1/4 tablespoons dried thyme
1 tablespoon cayenne or red pepper
3/4 tablespoon black pepper
3/4 tablespoon dried oregano
1/2 tablespoon ground bay leaves
1/4 tablespoon chili powder

Combine all ingredients; store in an airtight container. Use with seafood, chicken, beef, French fries, popcorn or vegetables.
Yield: 1/2 cup.
