If you go to the Nesco site, they have a fine selection of recipes. For some reason, Rival is not currently making their roaster manuals downloadable online, and the recipe collection is minimal.
You can find some rival manuals for sale on eBay.

Ann, as mrentioned just above, Rival does not post its manuals. You can download the Nesco manual, which is about the same. You can also go to EBay and buy a manual- they come up for sale (just the manual) from time to time.

About 18 pounds is the best. You can go a bit larger, but the cooking is not as even. Go to the Nesco site above or eatturkey.com if you like, for more help.

Go to the manufacturer's website, read/download the manual. Programmables are not my bag- they vary from brand to brand. Use a thermometer and start checking at least 1/2 hour before you think it will be done. Preheat the oven at least 20 minutes. If you want brown, start in a preheated regular oven for 500 degrees for 20 minutes before using the roaster.

This is a really stupid question, but you do have to put water at the bottom of the roaster to cook a turkey right?
|

Very usual question. It already cooks quite moist, you do not have to put water in the bottom of the cookwell. Do put the little rack in the bottom.

UNfortunately, the website now longer exists...at least it says that on my computer. Can you just please tell me if the turkey coooks faster in the roaster as mine somehow turned off and now I am afraid it won't be done on time.

It usually cooks a little faster. Use a meat thermometer.

I ran into your thread, and have my manual here...it says to not add any liquids (yummier skin. Preheat for 20 mins. Turkey prebasted: 375 degrees for 12-15 mins per pound (more per pound the closer your bird is to 22 lbs) and for fresh turkey (only 10-14 lbs) it says use 350 degrees 15-17 mins. Safe poultry is 165 degrees at the breast but don't forget the bird will continue to cook a little after you take it out of the oven, so you might remove it when breast meat is 155 degrees. Happy Thanksgiving

cooking turkey in a rival roaster?
when cooking a turkey in a rival roaster, do you put water on the bottom or just the turkey and seasoning and then just cook it or add water?
|
ellen

I do not add any water- the roaster cooks moist already. I do put a cake rack in the bottom to keep the turkey out of the juice, and I do PAM the cookwell.

I never add liquids and I use the Rival roaster oven. According to the owner's guide, "to create a darker roasted, crispier skin poultry, do not add liquids (with the exception of the basting butter or oil) until there are only 30 minutes left of cooking." I always have so much juice on the bottom when the food is almost done, I do not need to add anything. It also says on another page that "reducing temp and increasing time will result in a darker crispier crust." I cook my turkey on 325 and baste every half hour and it comes out great. It usually ends up taking about the same amount of time that is on the turkey package since I remove the lid so much and cook at a lower temperature.

I too lost my instructions for my Rival 20qt electric roaster and need to know if I can heat a bone in fully cooked spiral ham in it. I tried it one year and placed the ham on foil on the rack. It didn't heat it more than the bottom inch or so. Will it work without the foil?

Preheat the oven. I just posted this info yesterday on another thread:
Reheating these whole hams is a little tricky because they tend to get dry as they get warm. If you want to reheat carved ham, USDA recommends heating only those slices needed and not the entire ham.
To reheat a spiral-sliced ham in a conventional oven, cover the entire ham or portion with heavy aluminum foil and heat at 325 ºF for about 10 minutes per pound.
Spiral-sliced ham vacuum-sealed at a USDA-inspected plant will exhibit the USDA mark of inspection on the label. These spiral sliced hams should be cooked to an internal temperature of 140° F as measured with a food thermometer.
For spiral-sliced hams that have been repackaged in any location, reheat to 165° F. Individual slices may also be warmed in a skillet or microwave.
Fully cooked hams can also be sold unsliced, If you want to reheat a whole ham, use a preheated oven set no lower than 325° F and, like spiral-sliced hams, heated to an internal temperature of 140° F as measured with a food thermometer.
IMPORTANT!!! For fully cooked ham that has been repackaged in any other location or for leftover fully cooked ham, reheat to 165° F.

These manuals are available from time to time on EBay- you may want to check. Any roaster manual will give you recipes that will work in your roaster. Or you can use it as a slow cooker, 195-200 for low, 290-300 for high.

You can also call their service number:
1-800-323-9519 rival service. Wait for the help, don't push 1-5 when prompted and wait for a person.
They can email most of their manuals and are nice to work with.

Kathy if you read the answer immediately above this, you can re-order your manual. Or use the Nesco roaster manual, info at the top of this thread. This is not something to waste your despair capacity on.

i lost my manual and i have never used the roaster before....I bought it because my sister has one and said she uses it just like a over and i recently moved out and dont have a oven....is it possible to cook chicken parm in a roaster oven? My sister said that i can put it in a pan and place the pan into the roaster and it will work fine...In my roaster there is a bin that comes out i am assuming for easy cleaning....can i cook the parm directly in that? or will it just burn? thank you for your help

Melissa, the pan that comes out is called the cookpan. You CAN cook directly in it, but that is usually done for large item, or for large amounts of casseroles, soups or stews. For something like chicken Parmesan, you want to put the little rack on the bottom of the oven and put your sheet or pan on the rack. For best success with roasters, preheat for 15-20 minutes, keep the lid on, and remember that they tend to cook faster and moister than ordinary ovens.
My family cooked and baked for 2 years with only a roaster when we lived in Taiwan. Mom made everything she made in the regular oven in the roaster.
