We need to make mashed potatoes for 100 people for a wedding reception. I read the recipe on freeze and hold potatoes but here is our problem....the reception is about 35 minutes from the wedding location and we are doing the food ourselves. How could we warm the potatoes in enough time without them burning? I do have an 18qt roaster and have access to a second one also. If we turn them on at a low temperature while at the wedding I'm afraid they will scorch but if we wait until after the wedding they will be cold when everyone arrives. Any suggestions?

Hire someone not related to the wedding with food expeience to meet the set up folks at the reception site, stay there, and turn everyting on, put out food, finish setting the cold and hot stuff out, and help clean up. For 5 hours the usual pay is around $100 cash and it is a real investment in food safety and peace of mind.

Also, keep in mind that with photos, clothes changing, etc, the wedding party will arrive about an hour after the rest of the guests. There needs to be a table of appetizers/starters to cover that hour (about 4-6 bites per person.) Experienced caterers usually set this up away from but within site of the main serving tables, so people know there is a full meal coming.
