I am serving bruschetta for 1500-200 people

I am going to a wine festival as a food vendor. I plan on serving tarragon chicken salad, hummus, smoked salmon pate and curry shrimp salad with grilled bruschetta bread. I am planning on 2 oz of spread per plate. I am figureing that I would need aprox 23 cases of bread to give 8 slices per plate if there are 20 loaves per case at 20-25 slices per loave. I am planning on making 50 pounds of each spread. Does this sound right?

Kelly, take this question to the catering board at chef2chef.com.

Check your math. 200 pounds total spread is only 1600 2 ounce servings. a 2 ounce spread makes one thinly spread standard size sandwhich. So I think you have too much bread for this amount of spread.
