how long does it take to cook 10lbs of pork butt at 200 degrees? how much water would you put in to keep it moist?

And is the end meal sliced roast or shredded BBQ?

they are 5 lbs each and it will be sherdded

If you have a 6 quart or larger crock pot, that would be ideal. 8 hours on low, put about a pint of good quality chicken broth or lager beer in the bottom of the pan. When you have cooked it, shred it and add the BBQ sauce and chill overnight in the sauce- this adds to the flavor and bulks up the meat a little, since it absorbs some of the sauce.
