Keeping meat warm in a NEsco
Megan

I am having a grill out this weekend and serving hamburgers and brats for about 50 people. I want to do all the grilling the night before. Can I keep the prepared meat warm in a Nesco all day without them drying out? I have heard of doing this with some sort of liquid base but I am unsure what to use?

Nope.

If you want to hold longer than 2 hours, they have to be heated to 160 and held above 140 degrees, for food safety reasons. Regular burgers won't tolerate this.

You must reheat to 160 only enough burgers to last 2 hours, then an hour and a half later, start reheating the next portion, etc.
