Turkey, turkey and more turkey!!

Ellen,
I'm catering a Holiday dinner by myself for 90 people and I need to do turkey and ham. My question is: After I take out 1 turkey, will it be safe to cover and leave out until the other 3 turkeys finish, provided all this happens in the same day? Or should refrigerate? I don't wanna have to re-heat the turkey.

No, absolutely not.

I have an entire section on large holiday meals at the top of big pots with several articles on cooking and safely storing and reheating large amounts of turkey. The only other option is to buy or borrow 4 18 quart roasters, plug then in on different circuits and cook them all at the same time.

We are having a Turkey Dinner for 125 people.
Menu
Turkey
dressing
ham (boneless)
frozen beans
turnip
potatoes
marinated carrot salad.

Please gie me the qunties needed and if possible receipes for the salad and dressing

Marie go to the holiday cooking section at the top of Big Pots and read the planning and shopping article to make your list. Use 1 1/4 times the amount for 100 to serve 125. It even discusses amounts for turkey and ham together.
