Potato Flour vs Potato starch flour
Trude

Can anyone tell me the difference in Potato flour and potato starch flour? What are the best uses for each?

Potato flour is dried gound up potatoes. Potato starch flour is the starch only, water-extracted, then dried and ground up. It is the same as the difference between cornmeal and corn starch.

Potato starch is used for thickening, only. Potato flour is used in place of wheat flour in some recipes.
