I need help in knowing how much food to purchase for a anniversary party.I have plenty of help in the kitchen,I have hired a taco caterer who will make 3 kinds of tacos.I will make the appetizers of tortilla chips and gucamole,a friend has offered to make salsa.Watermelon,cucumbers,mangos,pineapples,jicama wih lime and chile.I'll also be making spanish rice and pinto beans.I was wondering if a caesar salad would be neccesary.How many bags of chips?How many avocados would I need to make guacomole? How much fruit? How many pounds f rice and beans?
Also,how much in advance should I mix margaritas?

With the tacos having the shredded lettuce and diced tomatoes, and the fruit salad, you don't need a second green salad- if you wish, just put out some ranch dressing for anyone who wants to do a taco salad instead of straight tacos.

You want at least 8 pounds of corn chips for a hundred people, and since they are bagged and will keep, why not just get 8 pounds?

You want at least 1/4 cup guacamole per person, so the amount of avocado depends on your recipe- some have a lot of additions- I use the pre-peeled avocado halves in plastic that we get in Texas for this, they run smallish, I get 1/2 per person when I am rich; make my guac with just salsa, lime, cilantro and avocodo.

For the fruit, see the fruit tray page for info on quantities for fruit as purchased and how much is left when it is ready to eat.

For party cooking I allow 7-8 pounds each dry rice and beans per 100. Do look at the borracho bean recipe at the bottom of the beans for 100 page, it would be great with this meal.

I ALMOST FORGOT THE MARGARITAS!
Mix the first pitcher when you start cooking, eh?

You can mix at any time as long as you don't add or blend in ice until serving time.
