unripen, green apples

My neighbor has an apple tree that is full this year. However, the small, unripen apples are falling off the tree. Is there a recipe that cans these small apples?

Ah, windfalls, Fresh apple pies are the first good thing on the list.

Green apples are the desired ingredient to make home made pectin (like Certo) and used with any fruit that does not jell well when making jelly. up to 1/2 and half with berries, peppers, mint, etc. Here is an article:

Like green tomatoes, they make excellent chutneys and relishes, I like to add nuts and dried fruits. Also, with some experimenting, yo may come up with a pie filling or fruit sauce (blended with apple sauce) that you can can.
