I am doing a dinner tomorrow for 35 people.
Appetizers will be served (shrimps, cheeses, munchies).
Chicken Satays are the meat that is being served. For 35 people I will make up 70 so that there will be two for each (even though many will probably eat one).
How much of each of the following salads do I need - how many pounds, cans, etc.
Potato salad (with onions, leeks and potatoes, mayo, olive oil and lemon juice)
Bean Salad (variety of beans in oil and vinegar)
Corn Salad (canned corn with onions, pimientos, and dressing).
Could you please give me an idea so that I make the right amount. Quite often I am afraid I will make too little and end up with way too much.
Thanks so much for your help. I will be preparing salads later today. They will be OK if in the fridge until tomorrow won't they?

Today for tomorrow is fine, in fact the bean and corn salad will improve by standing.
Potato salad (with onions, leeks and potatoes, mayo, olive oil and lemon juice) 1 to 1 1/2 gallon
Bean Salad (variety of beans in oil and vinegar) 1 gallon
Corn Salad (canned corn with onions, pimientos, and dressing). 1 gallon
You will not have much left over. If anxious, add 1 more quart of each, you will have some left over. BUT what I would do instead is the lesser amount and a nice baked rice pilaf (2 pounds dry rice)- chicken satay just longs for a bed of rice.

Hi Ellen,
When you suggest 2 oz of salad per person is that for a side salad. I am having a reception for 85 people. Spring salad mix with tomatoes, carrots, cucumbers, peppers, served with 22 lbs sliced marinated pork tenderloin, 25 or 30 lbs chicken salad that they can top their salads with. I will have sides of blue cheese, walnuts, craisins and mandarin oranges. 4-5 qts salad dressing.I am also having tomato bisque, 8 oz svg pp for a total of 22 quarts. Also brownies and cookies. Do you think that my measurements are pretty accurate?
