Chicken Piccata for a Crowd
Betty Hornsby
i am preparing chicken piccata for 60 people for an engagement party. i will also make lasagna. i will brown the chicken early in the day and make the sauce. i will cook the pasta ahead as you have suggested. should i put it all together in a casserole or keep all the parts separately (heating them separately) until the last minute and combine?

thanks for the help.

I don't mix the piccara with pasta- I serve separately. Be sure the chicken is cooked through )for breast cutlets, that os about three minutes per side, chill immediately and fast, keep chilled intil reheated.
