Final Count for Wedding Menu

You looked over my numbers back in March, but I am doubting the amount of meat and just wanted one last opinion. The wedding is at 5:00 pm and I am planning on 115 although RSVPs have been horrible. My menu is: 1. pulled pork sandwiches (variety of sauces) with small slider rolls (self serve)- 25 pounds raw meat & 125 rolls 2. fried turkey sandwiches with small slider rolls (self serve) with a condiment tray of lettuce, tomato, red onion, mustards & mayo - 45 pounds raw meat with 125 rolls 3. 'Lil Smokies in sauce - 12 pounds 4. Pasta Salad (with ham & salami)- 7 pounds dry pasta 5. Potato Salad - 5 gallons 6. Relish Tray (olives pepperoncini, tiny dill pickles, pickled okra, sweet pickles) - 64 oz. of each 7. Veggie Tray with dip (califlower - 5 lbs., broccoli - 10 pounds, baby carrots - 4 lbs., cucumbers 8 each, cherry or grape tomatoes - 8 pints) with 8 cups of dip 8. Fruit Tray with dip (cantaloupe - 4 each, honey dew - 4 each, watermelon - 20 pounds, green & red grapes - 4 lbs. each, strawberries - 4 lbs, kiwi, blueberries, blackberries, and raspberries will be used as fillers on the tray) 9. Cheddar Ranch Cheese Ball - 12 pounds with 6 pounds of crackers 10. Spinach Dip - 6 pints with 6 pounds of crackers 11. Seafood Dip (it is a thick heavy dip) 8 pounds with 6 pounds of crackers 12. The bride's cake is red velvet 13. The groom's cake is white 14. Beer, wine coolers, etc. 15. Tea, water, lemonade 16. mini chocolate bars on the tables

To me, this looks about right; the only thing you may run short of, is the dips. People LOVE seafood dip, and for spinach dip, I usually allow 1/4 cup per person. And I might cut down on the broccoli and have cucumber sticks or rounds for part of the veggies.

Thanks. I'll add to the those dips. They are two of the easiest things I am making. I had planned on cucumbers too.

Is 5 cups of dressing enough for the veggie platter? I'm using sour cream and Hidden Valley Ranch dry mix?

You have a lot of other dips so 8 was OK may be a little close.,, You could have some unopened bottles of ranch in reserve.

I've decided to add honey garlic meatballs to my menu. Everything else is the same. I'll make small meatballs. How many should I make?

4 per person would be plenty.
