I am serving appx.100 people. The menu consists of baked ziti, chicken scampi served over pasta, meatballs(served alone}and garden salad. I need help with the portion ammounts. I have read your portion ammounts on pasta but with 3 types(not my idea) I need to know how much to serve with each. Thanks

Unfortunately, with 3 items and just 100 people, you will end up having to make more than you think, in order to make sure everyone gets their first choice on the first serving- I presume it is buffet service.
People will treat the ziti as a side dish unless it has meat in it, you would allow a max of 8 pounds dry pasta. The chicken, you want 3-4 ounces cooked meat per person, that is 2 pounds raw boneless for 9. 3 ounces cooked meatballs, and you won't have much of these left.
People will take pasta for both the chicken and meatballs, even if they have to dig around in the chicken to get it, so make at least 6, up to 8 , pounds dry additional.
