Dinner for 80

On second thought I figure I should check my menu with you to see if everything will be ok.

500 medium size shrimp with cocktail sauce
35 lbs brisket with gravy
350 potatoes
10 bags of salad
your green bean casserole (if I can figure out what is a #10 can)
rolls for everyone with butter
dessert-
fruit salad
180 chocolate chip cookies
80 brownies
big sheet cake that will serve 80

coffee/drinks

Assuming that that is a typo in potatoes and you need 35 pounds, this is about what I would get. Do not forget the cocktail sauce- 1/4 cup per person.

Thank you. Can you suggest how to keep brisket warm without over burning it? I read your suggestions about potatoes (yes a typo, we aren't carbo nuts!!!) and I will follow it to the letter. Do you have a suggestion about meat? I'm worried since this group tends to show up late.

Oh and do you think this is enough food for 80 guys? I have never done this before.

If this is 80 GUYS and they are serving themselves, you probably need 45 pounds ready to eat brisket, what can I say, they eat a lot compared to mixed groups. If the weight includes gravy you might even go 50. 2 rolls for everyone.

To keep the brisket hot: Put some gravy in the pan, layer in the hot sliced brisket, cover tightly with foil, hold in preheated 200 degree oven. Will hold well about an hour,
