Canned mashed swee5t potatoes/yams would be your best bet- 1 #2-1/2 can per deep dish pie- that's the large family size that holds something over 2 1/2 cups. If you are dead set on doing them from scratch, you need at least 40 pounds, as you need to end up with 2 cups for a regular 9" pie, but they are better, I think, made deep dish.
