How far ahead can I safely prepare: a)macaroni salad with a mustard/mayo dressing which contains hard cooked eggs? b) hot potato salad with bacon drippings, vinegar, raw egg in dressing (egg cooks in the prep)?
Can the dressing be added to cole slaw a day ahead? or is it better just before serving?

Mac salad, day before is fine. If 2 days before, use a rigid pasta like penne or radiatore.

For the potato salad, best if NOT reheated. Can you do day of? Use the Davissons pasteurized eggs for no worries about the dressing.
