Hi, I am cooking a pork dinner at our school. We plan on 200 people. I have 6 cases of pork roasts. 156 lbs total. Each roast is approx 13 lbs. I have no idea how to cook this and for how long. Ive been told to use kosher salt and coarse pepper baked at 325?? For how long?? any ideas. thanks, Lizzy

First, don't cook it all, you only need 100-120 pounds raw.
Second, see the beef roasting article for roasting times.
Be sure they are fully thawed in the refrigerator before roasting, this can take 2 days.
There are many ways to cook roast pork. Suggest you cook one by your proposed recipe before the event.
