bread Pudding
I need to make bread pudding for 60 people. I can convert ther recipe. But I am stumped on cooking time. I am using and industrial oven with the large industrial baking dishes 3x18x28.


Add about 20 minutes per inch of depth greater than the original recipe, if it is not coming out of the refrigerator to bake. 1/2 hour per inch if it is coming out of the refrigerator. Check with an instant reed thermometer in the middle of the pan (don't touch the bottom of the pan); should be 155 when removed from the oven.
