We're making the jambalaya for 100 next week and I just wanted to double check the instructions:
It's just 13 cups of raw rice, correct? With the same amount of broth added with the rice? Everything I've made on this site works great, but I just thought I'd better check that amount. Thanks so much.
Yes, the canned tomatoes provide additional moisture. Check the last 15 minutes and add some reserved broth if needed...
Thanks for the pat on the back.
By the way, you can increase the rice to 18 cups as long as you also increase the broth. You can also agg 2 pounds of celery with the onions and peppers.
Thanks so much, Ellen. I was thinking of adding celery and now I don't have to guess how much.
You are a lifesaver!
