I am making Sinach Stufed Shells for a Christening. Approx. 50 people. Possibly a little less. What is your recipe?

What is the best way to prepare them ahead of time? Do you prefer to freeze the shells individually, and cook through with thawed sauce, or freeze the entire dish all together and cook that way? Also, is it better to thaw first then cook, or is it okay to cook them from frozen?

Cook pasta from frozen to reduce sog. Sauces often break or get watery; I am never quite satisfied with the cooked all together mode.
