Rehearsal Dinner

As a wedding gift, I am making the food for the rehearsal dinner. There will be approximately 50 people. I want to make beef tenderloin, chicken piccata, roasted red potatoes, a vegetable and a salad. I have no idea as to how many tenderloins, chicken or potato's to cook.
I also have cooked rehearsal dinners as wedding gifts. One was a Thanksgiving dinner!

With this menu, many guests will take some of both entrees.

beef tenderloin, 2 pounds per 5
chicken piccata, 4ounces boneless skinless raw per person
roasted red potatoes, 18 pounds
about 12 pounds ready to eat veg
1/2 the salad on plan for 100
2 luscious desserts
