I am preparing lunch for 60 ladies who are
between the age of 50 and 80 - I need it to be
easy because we are having a speaker and I don't want to miss out on that.

You could do this entirely make ahead-
Cheese trays and fruit trays (no berries on the fruit trays)
Chicken salad
greens (just 3 ounces each)
good crackers and rolls
Dessert bar with 4 small bars/brownies/cheesecake bites/ cookies per person
Deviled eggs (2 1/2's per person)
