Hi, Jeanne, Frontier Foods makes a wide variety, usually available in the bulk section of natural foods groceries. The many storage food/ Latter Day Saint outlets have them. You can also make your own- whenever you are doing a long slow roast, you can thinly slice or chop the celery tops, spare carrots, green beans, etc, you have in the fridge- even very thinly sliced sweet potaot or potato. I have a gas range, so it is not expensive to run. When I am doing a serious baking or all day oven thing, I sometimes clear veggies out of the refrig, whack into thin bits and dry on a cookie sheet at 185 for several hours, then leave the over door closed overnight. I especially do celery, carrots, parsley (leaf only- stems are rather bitter) lemon zest, spinach, mushrooms but not tomatoes. . I buy dried onion flake and nowadays the restauranrt gallon bulk dried mushrooms ae a warehouse store- cheap. Home dried this way doesn't keep forever, store them cool and use within 2 months. You will get better results with a dehydrator, but try to borrow one, threy are very bulky to store. |
