Wedding Buffet for 240 adults

Could I get feedback as to whether or not the below quantities of food would be (more than) ample for a dinner buffet for 240 adult guests:

APPETIZERS:

* 15 # cubed cheese
* 15# trimmed veggies
* 5# crackers
* bruschetta crustinis with 10# romas
* bruschetta crustinis with 6# asparagus
* 26# ground veal and pork for meatballs
* 10# portobellos and 2# crab for stuffed shrooms
* 490 - 1oz. pieces of spanakopita

SALAD:

* 12# spinach
* 9# cherry tomatoes
* 5# shaved parmesan
* 6# croutons

DINNER BUFFET:

* 261 - 4oz. grilled chicken kabobs
* 261 - 4oz. grilled top sirloin kabobs
* Manicotti Noodles: 20# pasta, 15# ricotta, 15# mozzarella, and 24# roasted veggies
* 52# green beans

* 5# crackers
* bruschetta crustinis with 10# romas- how many pieces
* bruschetta crustinis with 6# asparagus

You need 3 pieces per person total
* 26# ground veal and pork for meatballs- I usually do 15 pounds meatballs per 100
* 10# portobellos and 2# crab for stuffed shrooms unless these are tiny, not enough, people will take 2 each- might skip
* 490 - 1oz. pieces of spanakopita- OK

SALAD:

* 12# spinach short- need about 8 pounds per 100, increase the rest to match
* 9# cherry tomatoes
* 5# shaved parmesan
* 6# croutons

DINNER BUFFET:

* 261 - 4oz. grilled chicken kabobs- OK
* 261 - 4oz. grilled top sirloin kabobs- increase about 1/4, a lot of folks will take 2
* Manicotti Noodles: 20# pasta, 15# ricotta, 15# mozzarella, and 24# roasted veggies- OK
* 52# green beans- 55+

Need good rolls/bread, 12 pounds per 100 plus 3 pounds butter per 100
