can you keep chicken warm.i read on a sight that you can wrap bricks in foil heat in the oven and place in a cooler and it wll keep chicken warm for several hours
ellen
06/05/12
You will run out of mac and cheese.

With all the other meats, 12 pounds sausage is way plenty. Potato salad, start with 25 pounds of potatoes.

Food is considered "safe once it comes out of the oven for 4 hours. I do not suggest the brick method. And electric roaster at 180 is a MUCH better idea.

graduation party
Hi Ellen, My daughter and her best friend decided they wanted to have their grad party together, so we are having a picnic style party in the park. Between the two families we have invited approximately 180 people including children but not including their (HIGH SCHOOL FRIENDS)! Our menu will consist of:
Meats: Hamburgers/Brats/Italian Sausage
Salads: Macaroni/Cole Slaw/Ambrosia
Sides: Baked Beans/Corn on the cob
Fruit: Mixed Fruit Bowl or Mixed Berries Bowl
My main concern is the quantity of meat i should purchase, but if you could calculate the other menu items i would appreciate it. Oh, one more thing how do you accommodate for your kids friends when you don't know how many will show. Thx
ellen

Having a graduation party. Pulled pork, slaw and baked beans for 80 to 100 people.
What quantities will I need?
ellen
05/08/13
Have to plan for 100.

Cole Slaw, 3 gallons per 100
Baked Beans, 3 gallons per 100
You need 4 gallons of pasta or potato salad

1.5 buns per person
38 pounds raw boneless meat and sauce in proportion per your favorite recipe, plus 1 cup sauce per 5-6 instead of ketchup.
You need condiments for sandwiches, see the sandwich page for amounts-

If this saves you time, trouble, or money, please consider a donation, maybe a dime per person, to support the site.

Graduation Party 150 guests. Pulled pork, baked beans, taco bar (beef, chicken and veggie fillings) possible baked ziti. Soda, water and beer. What quantities should I plan.
ellen
05/09/13
This is a little amorphous, so a tough estimate. I would do the taco bar for 150 (see taco bar page) and make the pulled pork part of the meats, do 20 pounds taco beef and 15 pounds taco chicken and about 25 pounds pork for pulling. I would switch the beans to borracho beans or ranch beans or black beans (something that would also go with the tacos)), about 5 gallons, and do Spanish rice instead of ziti (baked and MUCH easier than the ziti). Just add about 100 rolls to the rest.

Slaw would be very nice with this, about 4 gallons.

The soda water and beer are covered in pretty good detail on the beverage page. Take a look and if you need coaching just post again.

Hi, I am having a graduation party for about 80 people. We are having pulled pork, ziti (both regular and buffalo chicken), hot dogs, tossed salad, fruit salad and a vegetable tray. How much of each should I make for about 80 guests?
ellen
06/28/13
Unless you are deeply devoted to hot dogs, consider skipping them or switch to meatballs- healthier, and perfect with the ziti.

hot dogs, 1 per person, but don't open all the packs
OR 8 pounds meatballs, about 3 quarts sauce
pulled pork, about 20-24 pounds raw boneless pork
buns and sandwich condiments, see the sandwich event page

ziti (both regular and buffalo chicken), 8 pounds dry pasta, about 1 quart sauce per pound

tossed salad, 2/3 the amount for 100 on the paln for 100 page
suggest you add a gallon of slaw with the pulled pork
fruit salad, see the fruit tray page- but consider fruit trays- easier to prep, prettier, and the leftovers are more useful
vegetable tray, with the green slad, consider the classic relish tray for 60 on the veggie tray page, with 2 pounds each baby carrots and cherry tomatoes added.

If this saves you time, trouble, or money, consider a donation, maybe a dime per person, to support the site.

50 people(adults); 3 entrees; beef, sausage, chicken. How many pounds of each?
ellen
06/30/13
Assuming that you are grilling, that this is buffet/ self serve, and that it is a party of mixed adults; when people have a choice of desirable entrees, they take more and often some of each; 2 pounds raw boneless beef per 7 plus 1 pound boneless chicken per 6 (if bone in, 1 piece per person, with the chicken cut into 10 pieces) plus 1 pound sausage per 6.

If this saves you time, trouble, or money, consider a donation, maybe a dime per person, to support the site.

Hi! We are having a graduation party for 150 people from 12-5pm. What are the proper quantities to prepare? Cheese tray, fruit platter, veggie tray. Meats: Pulled pork on roll, italian sausage w/ peppers and onions(roll offered), fried chicken. Chicken riggies, eggplant parmesean, BBQ beans, corn bread soufflé, tortellini/spiral pasta salad, Caesar salad. Variety of desserts: cookies, brownies, cupcakes, cakes, pies, cheesecake. Thanks so much! :)
Mary
07/06/13
Also, some sort of a potato dish, but not sure yet as to what. Maybe a garlic, cheesy mashed potato, or a cheesy, bacon potato casserole.
ellen
07/06/13
graduation party
You definitely do not need a potato dish, based on the menu and on the oven space issues. The only thing you might add, based on the pork, is a couple of gallons of vinegar slaw. This is what I would do:

For desserts, see the dessert planning page. It takes about 23 pounds of fruitcake to serve 100 people cheesecake, and there is lots of help for dessert buffets.

Cheese tray, about 12 pounds, some can be spreads or logs
crackers or bread, 10-12 pounds
fruit platter, see fruit tray page
veggie tray, see veggie tray page. Consider doing 2 classic relish trays and fresh veggies for 50, would go well with this menu

Meats:
Pulled pork on roll, 1 pound per 5, 5 rolls per pound
Italian sausage w/ peppers and onions(roll offered), 1 pound sausage per 5, equal weight veggies, 60-75 rolls
fried chicken, 1 piece per person

Chicken riggies, 10 pounds dry pasta
eggplant Parmesan,
BBQ beans, 5 gallons
corn bread soufflé, hard call, about 10 9x13 pans
Have about 3 pounds of butter, a gallon of pickles and 6 pounds of sliced onions for the sandwiches

tortellini/spiral pasta salad, 9 pounds dry pasta or 12 pounds tortellini to start
Caesar salad, see plan for 100 page, 1 1/2 times the amount for 100

If this saves you time, trouble, or money, please make a donation, maybe a dime per person, to support the site.

60ppl for a graduation party...making pasta w/meatballs, chessy potatoes, green bean casserole, sausage w/pep n onions...how much or how many lrg foil pans do you recommend?
ellen
07/08/13
I would make:

40 full servings of pasta with meatballs- that's about 5-6 pounds of pasta, 1 pound meatballs per 5

cheesy potatoes, see this recipe (bottom of the article) and do 6 pounds;

www.ellenskitchen.com/bigpots/plan/brunch100.html

green bean casserole, one recipe of ellen's better green bean casserole, see the top of the Big Pots page

sausage w/pep n onions, 1 pound sausage per 4, equal weight mixed onions and peppers

If this saves you time, trouble, or money, consider a donation, maybe a dime per person, to support this site.

At least 150-180 people for a grad party! Help
! Menu is.
Hot dogs
Meatballs
Potato salad
Green salad
Possibly sandwiches - hoagies with ham cheese and turkey - pre made if cheaper
Hot wings if cheaper to
Buy bulk from Costco

Desserts.
Cupcakes. 1/2 sheet cake
Candy bar - daughters request - no idea how much to buy for that

Beverages. Iced tea. Soda water

ellen
07/08/13
You are basically looking at $1200-1800 for 180 guests, and you need more food.

Hot dogs, 2 per person
Meatballs, 10 pounds per 100
You need buns and condiments, see the sandwich page
Consider skipping the hot dogs and just doing meatballs, 1 pound per each 4

Potato salad- 4 1/2 gallons per 100
Need to add pasta salad, 10 pounds dry pasta
Need to add one additional starchy dish, such as baked beans or borracho beans; or fruit trays

Green salad- see plan for 100 table, do 1 1/2 times the amount for 100
Add slaw, 4 gallons

Possibly sandwiches - hoagies with ham cheese and turkey - pre made if cheaper
It would require 6 6 footers to feed all the guests without any other meat, one makes about 30 servings. A foot long can be cut into 4 pieces for party serving.

Hot wings if cheaper to buy bulk from Costco. Hot wings are never cheap these days.

Cupcakes. 1 per person if 1 flavor, 100 each if 2
1/2 sheet cake- is only 24 pieces

Candy bar - daughters request - no idea how much to buy for that
Basically, 1 pound for each 4 to 6 people, depending on type and size of candies.
These are extravagant

I'm having a graduation party for about 100 people. Menu is
chicken, meatballs, mostacolli, mini sandwiches, fruit bowl, veggies and dip, pasta salad, ramen noodle salad, taco salad, mac n cheese, cheese nachos and buffalo dip. I have ordered 150 pieces of chicken, 72 sandwiches, 1/2 sheet cake, 48 cupcakes and a case of brownies(24 ct). Can you tell me the amount to purchase for the meatballs, mac n cheese, pasta salad, and taco salad? thanks

graduation party
Hi, Ellen

This is a very extensive menu with many last minute stove and oven dishes for 100 people. Are you using a commercial kitchen? Would you be willing to simplify? For example, mostaciolli or mac and cheese, not both? You will have fewer leftovers and it will be less work.

Write back. Helpful if you start a new thread.

chicken,
meatballs,
mini sandwiches, first choice to eliminate.
cheese nachos
How about a taco bar with beef and chicken and nachos? Or 6 foot heroes? It would take 3-4

mostacolli,
mac n cheese, Combine?

fruit bowl, maybe fruit tray- make aheadm, keeps better
veggies and dip, OK

pasta salad,
ramen noodle salad,
maybe just one?
taco salad, does not hold well

buffalo dip
chips?

Hi Ellen, I have to do cheesy potatoes for a friends grad party. They want half with hashbrowns and half with the country style hashbrowns.

There will be 71 adults and 12 children. We are figuring everyone over 14 as a adult.

Also gonna do 11x13 trays, do you know app. how many trays i would need.

Thanks bunches

ellen
07/12/14
You want at least 20 pounds of frozen potatoes; this size pan holds almost exactly 1 gallon. I don't know what/ how much you will add? Suggest you take the frozen in the bag potatoes and lay them in the pan and see how much it will hold, then calculate from that, figuring the sauce will be about the same as the space in the bags.

If you use foil disposable pans, absolutely do NOT pick them up full- they will bend and collapse. Move them on cookie sheets.

If this saves you time, trouble, or money, please make a donation, maybe a nickel or a dime per person, to support the site.

Serving 140, mostly adults, possibly 20 teens, tater tot hot dish, ambrosia and a lemon fluff salad, sliced bread, relish tray. How much hot dish & ambrosia & lemon fluff will I need? THANK YOU!
ellen
04/23/16
graduation party
tater tot hot dish,38 pounds each tater tots and ground meat, plus soup and other add ins per your personal favorite recipe. You would use a bit less without the teens.
ambrosia, see the recipe on this site for help with amounts
www.ellenskitchen.com/turkey/fruitsal.html

lemon fluff salad, right below the ambrosia is a jello and cool whip salad which may give you a clue to amounts
For both those recipes, you would use 2 1/3 times the amount for 50

sliced bread, about 12 pounds, butter please, at least 3 pounds

relish tray, do 2 times the classic relish tray on the veggie tray page:

www.ellenskitchen.com/bigpots/plan/appesalad.html

This menu really aches for a green vegetable- even broccoli cuts or cut green beans- 28-30 pounds.

Write back if you need to.

Hi
I'm usually just a famliy dinner cook, however, my niece has baited me to cook for her baby shower for est 75 guuest. Can you help me quantity for menu: chicken (we're gonna buy), meatballs, veg/string beans, potato salad and some type of fruit salad (any easy suggestions) and probably baked beans, rolls

chicken (we're gonna buy), 1 piece per person. If you have an "El Pollo Loco" or "Pollo Tropical" in town, consider these grilled chickens instead of fried
meatballs, 10 pounds, 3 quarts sauce
Suggest you use baguettes instead of standard rolls so people can make meatball sandwiches- 12 pounds bread/rolls

veg/string beans, suggest you do 1 recipe of ellens better green bean casserole, on the big pots page

potato salad, 3/4 of any of the recipes for 100 on this site; however, pasta salad is a bit easier to make- 6 pounds dry pasta plus add-ins, many recipes this site, can be done 1-2 days ahead

fruit salad, see the fruit tray page and do fruit tray for 25x3; trays keep better and the leftovers are more usable

baked beans, 2 gallons, 3 #10 cans

rolls, see bread note above
