hello! ... planning a party for 50 + here at my house ... for appetizers i'm preparing cold antipasto platters for each table (ham, salami, fontinella, assorted olives, roasted red peppers, artichoke hearts)
eggplant stacks, stuffed mushrooms, pesto bread and pizzette with caramelized onions will be at the serving table ...
entrees: 4 lbs (?) campanelle with sautéed spinach and mushrooms/4 lbs (?) farfalle with bruschetta sauce ...
sausage and peppers (how much sausage would be enough?) and chicken breast in a light white wine sauce (how much chicken would be enough?) ... green salad

Lovely menu.

eggplant stacks, stuffed mushrooms, pesto bread and pizzette with caramelized onions will be at the serving table ...
entrees: 4 lbs (?) campanelle with sautéed spinach and mushrooms/4 lbs (?) farfalle with bruschetta sauce ... plenty, may have some left
sausage and peppers (how much sausage would be enough?) 1 pound sausage per 5 equal weight veggies
chicken breast in a light white wine sauce (how much chicken would be enough?) ... 1 pound raw breast per 3-4- with the heavy appetizer, per 4 will be good, just make sure the pieces end up about 3 ounces each
green salad - do 1/2 the amount for 100 from the plan for 100 page
