I am preparing a pasta bar for 400 ppl with the main dish being Itilian sausage with penne pasta and maraniara sauce and the second dish Chicken Alfredo.How much of the chicken alfredo should I prepare since it is the second choice. There will also be fruit and cheese table, cesar salad, bread sticks and a lot of beer.

2/3 marinara, 1/3 alfredo. You also need about 2 gallons of a meat free pasta, with 400 people you have some vegetaraian or other special diets.

The maraniara sauce will not have meat in it. They want 3 inch sasuages on the side. If i figured right I will need about 100 pounds of Penne and 60 lbs of Fettucine. Is that right? I cater just about every weekend and I've fed up to 450 ppl, but this is my first pasta bar. Prime rib and sides are much easier.

OK. 80 pounds sausage. 20 pounds Parmesan. You will have plenty of pasta.

Yes, pasta is much trickier for large groups, do read the hints on my spaghetti page,

When catering, if you are having the pasta reheated at the serving table, by dipping into hot water, it takes about 1 server petr 80 just to do that.
